Crazy start of the year. It’s been a few really hectic weeks. 2nd place. I always admired the Brewers Cup. The only competition I ever was interested in, simply because it’s JUST filter coffee. I’m so lucky, to have had the chance to participate this year. I’m so lucky, to have met all those beautiful people in such a little time, that all made me who I am today. I’ve spent hours preparing this, hours with my beautiful wife @scoutjohnston who wrote my whole speech with me. Nothing ever would be possible without you. I couldn’t have done it without @flobichard , I’m forever grateful. And also all the team @_droudrou @yan.silberman @shaoedouard … I couldn’t have done it without @tanat.coffee , btw thank @alexisgagnaire for the beautiful coffee from @pochogallardo . I will always be part of the team Anna Tomo Olivia Pauline Leana Nico Connor Thomas Hugues Charly … 🫶🏻 I couldn’t have done it without the unconditional support of my Carlito, thank you so much for all the work, the stunning Maracaturra from @jhoanvergaraayure @differentecoffee I wouldn’t be here without my boys @ifyouseeaidan and @aidanbcox , I’m forever grateful to have had the opportunity to help build their little piece of paradise @fidelity.coffee I couldn’t have done anywhere, without the support and the love of @simon_gautherin and @camsflow . Farewell, our champion 🤍☕️😢 Today we say goodbye (for now) to someone who came to JIBBI with nothing but pure passion — and leaves us as a 2025World AeroPress Champion. From day one, he showed up hungry to learn, willing to listen, and brave enough to fail. Long hours, endless brews, countless questions — and a heart that never stopped caring about coffee or the people around him. He didn’t just improve his skills behind the bar. He grew — as a barista, as a competitor, and as a person. Watching that journey has been one of the proudest moments for all of us. He tested multiple roast styles, built water profiles for every “scenario coffee,” and pushed the Waved Technology to simplify last-minute dial-ins. Let´s welcome the World AeroPress Champion @nemo.pop 🎉 🏆 How does it feel to be the new World AeroPress Champion? It feels amazing, but also doesn’t feel real yet. I met such incredible people in Seoul - competitors from all over the world, brewers, judges, families, people that I respect and love. We shared this whole event together, and winning was just the cherry on top. Even if the win hasn’t fully sunk in yet, I feel so full of joy after having spent this week surrounded by these people. All in all, it feels damn good. 🏆 How did you prepare for WAC, and how did it go with your final recipe? We had already put a lot of work into perfecting a base recipe, which I used to win the Australian Championship. It was designed to work with most coffees by simply adjusting the mineral composition of the brewing water, and the burr set used. During our preparation before even leaving for Seoul, we very quickly decided to use the TigerShark burr set because the coffees it produced worked best with our style, and immediately after, we dove into water recipes. If I had one advice for any competition, it would be to plan WAY ahead, and to be ready for ANY scenario. 🏆 Why did you pick the Comandante X25 Trailmaster Forest with Tigershark Burr for WAC? The strategy we went into the whole comp with was to go for a cup with low acidity, which was the sweetest, roundest, and cleanest that we could brew, no matter the coffee we ended up getting. I already knew that the Comandante NitroBlade burr set tends to result in a cup with higher acidity, so we looked at the other Comandante grinders to see if we could find a better fit. The X25 Trailmaster Forest with Tigershark Burr ended up being an absolute banger: sweet, round, and clean, it perfectly fitted our goal, and our choice paid off! Looking back, I’m happy to have won with the most affordable grinder of all; it highlights the importance of choosing the right equipment, and that more often than not, the simpler, the better. Seoul 🇰🇷 What the heck just happened. It has not sunk in yet. What a crazy week. This whole trip has been incredible, and I am unbelievably lucky for everything that’s has happened to me. THE WINNING RECIPE from our newly crowned World AeroPress Champion 👇⁠ ⁠ 🏆 Champion: ⁠ Némo Pop @nemo.pop , AUSTRALIA 🇦🇺⁠ ⁠ ☕️ Coffee: ⁠ Sourced by @cafeimports , Roasted by @stereoscopecoffee ⁠ Packaging by @noissueco ⁠ Country: Ecuador⁠ Farm: Finca la Carolina⁠, Fausto Romo⁠ Process: Washed⁠ Variety: Sidra⁠ Elevation: 1,300 MASL⁠ ⁠ 💪 Preparation:⁠ Position: Upright⁠ Dose: 18g⁠ Filter: Flow Control Filter Cap, 2x Paper Filters⁠ Grind: @comandantegrinder Trailmaster x25 with Tigershark Burrs, 31 clicks, sifted at 200um⁠ Water: 125ppm water made with Apax Lab prototype, 84°C. Bypass water at 50°C⁠ ⁠Kettle: @variabrewing Aura Smart Kettle 👉 Method: ⁠ ⁠ 1. Pour 70g of bypass water into carafe⁠ ⁠ 2. Grind coffee (slow rpm), blow chaff and sift fines out.⁠ ⁠ 3. Place the AeroPress on top of the carafe, pour ground coffee (sifted and with the chaff blown out) into the brewing chamber⁠ ⁠ 4.
