We loved being part of Lengua Conference 2026 in Miami. ✨
A gathering created by Gluttonomy, bringing together chefs, founders, and voices shaping the future of food where culture, ideas, and gastronomy meet.
For the breakfast experience, we served pan de yuca with chutney made with yuca starch and cheese, baked fresh, soft inside and lightly crisp on the outside.
A preparation rooted in Ecuador, paired with chutney to bring contrast, balance, and a different layer of flavor.
A small way of sharing where we come from, in a space where food is the conversation.
A space for the conversations shaping the industry.
From chefs to founders, operators to creatives, this year’s theme Origins explored how culture, identity, and territory influence the way we build restaurants, brands, and experiences today.
This highlight is just a glimpse of what happens when the right people are in the room.
Thank you to our partners @resy , @sanpellegrino_us , and @nespressousa for supporting the experience.
If you’re in hospitality, food, or building in this space — this is where those conversations happen.
See you next year.

Two days. One idea: Origins.
For two days in Miami, we explored what it means to understand where things come from and how they evolve.
Across conversations on migration, identity, culture, and technology, one thing stood out: the future of food is rooted in origin, and shaped by how we reinterpret it.
Thank you to everyone who showed up to listen, question, and share. To the @gluttonomy team for making it all happen 🤍
And to the community shaping Miami into something more intentional, more collaborative, and more its own.
More to come.
