Thursday, May 22 📆
Chef Frederik Bille Brahe (@atelierseptember@apollo_bar ) and Franco Fubini (@natoora ) come together for a conversation about bringing real flavor and meaning back to food in a fast-paced world. Hosted by Fool magazine’s (@foolmagazine ) creative duo, PA and Lotta Jörgensen, they’ll explore how today’s food culture prioritizes speed and abundance — and why slowing down to cook with care is a powerful choice.

How can we reclaim radical flavour in a world that’s speeding up?
Join us on Thursday 22nd May in Copenhagen for an inspiring conversation between @franconatoora and @frederikbillebrahe , the chef and creative mind behind @atelierseptember . Together, they’ll explore how to reclaim flavour, ceremony, and meaning in a world that prioritises speed.
Led by @foolmagazine@pa_jorgensen and @lottajorgensen , the discussion will delve into the ways in which our food culture is built on acceleration and the illusion of abundance, highlighting how choosing to make a meal slowly, precisely, and with care becomes a quietly radical act.
Expect a rich conversation that invites you into a different rhythm. A seasonal bite and a drink will be served at the start of the talk, too.
Afterwards, stick around for a joint book signing.

The founders of @foolmagazine , @pa_jorgensen & @lottajorgensen , sat down to discuss when the next issue of the magazine will come out, their reasons for creating a long form magazine even as the world become faster and more condensed, their new documentary series, working on the @burntends.sg book, @mugaritz , and much more.
Which memories do you bring with you home when travelling?
The discovery of a wild bay leaf bush outside @mugaritz enriches every stew and brings us back to a time and place last fall.
We made a book with @burntends.sg and @dpynto 🤘
It is best described as a Foolish attempt to capture a restaurant, its philosophy, staff and guests; a snapshot of time and place. The idea was to be honest (you have to build a four-tonne dual cavity wood-burning oven as well as acquire a lot of skill) aka not dumbing down recipes but providing lots of inspiration and making the restaurant and Dave’s philosophy come alive.
We wanted the book to be as vibrant as the restaurant and to surprise the reader visually with great looks but also lots of content; a useable coffee-table book.

@lottajorgensen designed the beast, resulting in a vibrant and vivid book that weighs in at 2.5 kg and 368 pages.
