Around 570 tonnes of roses are imported into the UK for Valentine’s Day – grown out of their natural season and often discarded within days. ⁠ ⁠ This year, fall for what’s growing. Join us at Smør Bakery — 155 Powers St, Brooklyn — next Sunday for a pop-up farmers market celebrating the best of the season. We're setting up shop with our team's hand-picked favorites — local greens, asparagus, berries, the first stone fruit, fresh peas, and more. The Smør team will be putting our produce to work, baking a seasonal danish with the last of the oro blancos and peak blueberries, and serving a ricotta and asparagus toast. A portion of proceeds benefits the Natoora Farm Fund, supporting the next generation of growers. This is spring at its peak — come find us.

Right before citrus ripens, there is a sweet spot where the fruit has formed but the sugars are yet to set in. The essential oils and acidity are at a peak, opening up lots of opportunities in the kitchen. For the last few weeks, we have been deep in this micro season with some beautiful early season citrus grown by Gabby and Chris in Mildura, Victoria. Chef @eddington_scott , owner of @arnolds_kensington prepares us two punchy and flavour-packed dishes utilising the powerful essential oils and high acid juice of green citrus to cure and perfume. Did you know that every part of the broad bean plant is edible? ⁠ ⁠ From the young, tender tips to the flowers, beans and even the pods. ⁠ ⁠ Sweet, slightly crunchy tips, often overlooked, can be harvested early and used in a variety of ways: sautéed with garlic and oil, added to pasta, or tossed raw into salads. ⁠ ⁠ These, along with the unique, spinach-flavoured flowers, come to us from Sean at Good Earth Growers in Cornwall.⁠ ⁠ For the beans themselves, our growers carefully harvest them when the pods are plump and young. We’re wild about Winter Tomatoes, if you couldn’t already tell. And seeing these soil-grown beauties grace restaurant plates around the world is a source of pure joy. The four varieties Marinda, Iberiko, Camone, and RAF each bring something unique to the table. As their season winds down, we’re already counting down the days until November, when they’ll return to our plates once more. Here’s a look at how they’ve been served in London, New York, Miami and Paris: 1) Iberiko Tomato Carpaccio from a special spread at @mandolinrestaurants in Miami. 2) Chef Raphaële of @lecafeducoin93 plate of shiny RAF draped with agretti, served with guanciale and egg cream. 3) At @i.feel.dove in Notting Hill, Iberiko lies on a bed of smooth soured cream with chilli crisp. Featured on the menu for a second year running, which is only ever a good sign. 4) In March @jay_wolman of @intermission.intl joined @thewatermans.arms in Barnes, creating a delicious little plate of roasted pork collar with winter tomatoes and smoked goat ricotta. 5) Pearl pasta risotto with RAF and Nduja sauce by chef Julia from @martinboireetmanger in Paris. 6) Basking in the sun at London’s @qualitywinesfarringdon – Camone drizzled with Blood Orange and salmoriglio. 7) This dish from Chef Pauline Patarot @lesvinaigriers brings together both Marinda and Black Iberiko, grilled on the flame with red fruit vinaigrette, red cabbage, vierge, pomegranate and alyssum. 8) @michaelsnewyork serves a classic plate of Iberiko Tomatoes with prosciutto, burrata, basil, olive oil and balsamic. 9) Sea bass, Congolese broth with Black Iberiko, matembele and new leek by Chef Khloé Fearnley Derome @briquet.paris .

We pop by @forzawine ’s new outpost in Soho to try Winter Tomatoes in a way we haven’t before, charred, caramelised, and served with cod and crunchy hazelnuts. On the cool, green-hued terrace, Forza Fivers (English white vermouth cocktails) are poured on the rocks, passed around, and happily savoured. Now, knives and forks poised, we’re ready to dig into this new seasonal dish from head chef and co-owner, Michael Lavery. A summery recipe that’s made for winter, is how he sums it up. Cod from @flyingfish52 is gently cooked until it practically melts in the mouth. Winter Tomatoes are then very briefly caramelised in the oil left behind from the fish. They’re only cooked on one side, leaving the tops charred to perfection. To finish, a dressing is drawn out of the tomatoes, tied together with a hazelnut purée, olive oil and parsley. The result is a contrast of textures. Tender fish, tomatoes that sit somewhere between soft and crisp, and the deep crunch of toasted hazelnuts. For the recipe and interview, tap the link in our bio.
