There is nothing more annoying than when you forget an ingredient for a recipe!! @justzapp has come to my rescue on SO many occasions - they have such a huge range of products and are available 24/7. This was akin to a pasta alla nerano, fried courgettes, butter, parmesan but with the addition of wild garlic, basil, mint and lemon! So good!! AD
Ingredients:
4 baby courgettes
175g spaghetti
handful of wild garlic
handful of basil
handful of mint
70g parmesan
40g butter
1 lemon
Method:
put your spaghetti on to boil and slice the courgettes into rounds and fry on a high heat to get some good colour on them. finely chop the herbs and grate the cheese, set aside.
Once the pasta is cooked, drag it over into the courgettes along with the butter and parmesan. Mix well so the sauce emulsifies and then finish with herbs, lemon juice and more cheese!

1/4 Bread Ahead Sourdough Loaf
1 Courgette
200g Natoora Marinda Tomatoes
1 Bunch Asparagus
1 tbsp Capers
1/2 Bunch Basil
1/2 Bunch Parsley
200g Bold Bean Queen Butterbeans
1 tsp Dried Oregano
Chicken resting juices
2 tbsp Citizenâs of Soil Olive Oil
1 tbsp Molden Sea Salt Odysea Wine Vinegar
30g 30 Month Parmigiano Reggiana Extra
Salt
Pepper
