@freddybirdfood and last weekend he made a Sauce Charcutière …an absolute delight I was all the better to be reminded of! Exquisitely memorable in fact! As a person who tends to get culinary fixations and I made it today to accompany a juicy joint of rolled pork shoulder. Excuse the few additions and swaps. Butter, shallots, garlic, thyme, bay, white wine, white wine vinegar, veal stock, end of brandy, baby capers, those essential chopped gherkins, green peppercorns, the all important generous dollop of French grain mustard (plus a bit of tarragon mustard as had no fresh tarragon), chives, a little dill (lingering in fridge) and plenty of parsley. Crackling was shatteringly rewarding. Having pushed my plate aside I’m fit for no more exertion than two hour of snoozing with doglet ! #sauce #france #charcutière #pork #lunch
