2016. I saw a hiring ad on Facebook for Jamie Oliver’s new restaurant in Taipei. I applied, got my first job in food, and convinced myself I was hired—despite having zero professional cooking experience—only because I could be a human translator in the kitchen.
I lived in a tiny studio I shared with a coworker, and rode my rusty bike to work every day. Running the fryer, I’d secretly trade fries for strawberry balsamic spritzes with the bartender.
It was a popular restaurant—even @janetagram came to visit. I lost five kilos two months in from lifting heavy pots, breading endless arancini, and kneading stacks of pizza dough. I learned more than I knew how to name at the time. Once, I stayed overnight making fresh pasta on my day off because we were completely out. An Italian restaurant 86’ing all pasta dishes? Nightmare.
I still cook with my first chef’s knife, the one my coworker helped me buy, my name engraved on it. I’ve never sharpened it. I should.
2016 was also the first year I went to a Pride parade in Taipei. Three years later, from my room in LES—carved out of a living room with a fake wall—I watched the news come in as Taiwan became the first country in Asia to legalize same-sex marriage.
