Hokkaido Style Ice Cream
We’ve been chasing the texture of Hokkaido soft serve with something closer to home — Alberta milk.
The result is denser, grassier, a little more wild. We finish it with Osietra Classic caviar for salt and minerality, and perilla oil for that green, almost shiso-like lift. Sweet, savoury, cold, clean.
