Taking a moment to honor recent salads before one of our all-time fan favorites, the celery salad, makes its return. Proud to be life-long saladologists over here! Thanks to @knkranch for red walnuts and green almonds, @hasapplefarm for pink lady apples, @vang_farming_ventures for pea tendrils, @johngivensfarm for kohlrabi, @roots_organic_farm for chicories, fennel, and spinach, @fromagerielamuse for gouda, #bleumontdairy for aged cheddar, @rockycanyonfarms for squash, @sycamore_hill.r and @kenstopnotch__chavez for all the citrus, and for every drop of olive oil…@inezoliveoil .

Seremoni Grade Black Cod in a vadouvan curry beurre monté with housemade citrus kosho and purple cauliflower Grateful to @seremonifish for helping us celebrate our birthday this past weekend! Seremoni works with independent American fishermen to source sustainably caught, local fish. Their black cod is wild-caught on the West Coast and humanely harvested using an advanced form of the artisanal Japanese ikejime method. Michelin-quality fish for all 😉

Come visit Stir Crazy Estate! With help from our friend and winemaker Rosalind Reynolds of @emmewines , we have officially released our 2nd house wine: a 2025 Colombard from Ricetti vineyard in Redwood Valley, Mendocino, California. Ricetti Vineyard is a 30-acre ranch owned and operated by Pamela and Tom Ricetti. It was planted in the 1930’s and 40’s by Tom’s parents, and has been farmed organically by the family ever since. Ricetti is an incredibly special and historic part of California viticulture. We’re honored to have Rosalind help us bring this wine to life. Artwork by #BettyBailey

A glimpse of springtime on our XXXtra special plate of snacks this week: nasturtium leaf (taco?) and nasturtium flower sandwiches with chèvre and precious mulberries, tête de moine style sheep’s milk cheese twirled on the girolle, Ibérico shoulder, @lowry_hill_provisions Milano cotto ham, Parmesan crumbles with aged balsamic, and preserved guindilla and calabrian peppers

RITA’S ON TOUR - CALIFORNIA HERE WE COME. MAY ‘26 Super excited to be cooking with friends old and new on a whistle stop tour of California. Have been here a few days already and have hit up some of the markets and farms in the SoCal area. Wow. Cannot wait to pair this truly mind blowing produce with dishes from home and some Rita’s classics alongside these three incredible restaurants. It’s truly a privilege to be a cook at times like these, being welcomed into the kitchens of others and just working with exceptional ingredients. I can’t wait to get into it and I’d love to see some hungry friendly faces. Missy’s making some drinks using locally sourced ingredients also. A few team favorites of late: 1. Powerful and textural full bodied Grand Cru Blanc de Noir Champagne from @eric_rodez 2. Sneaky sauvignon blanc like you’ve never had before from Etienne Courtois 3. Sans soufre bottling of site-specific Saint Romain from @ph_rougeot in Burgundy 4. Super complex and engaging old vine furmint from @kolfok named to ‘Remember’ when this grape used to be the most widely planted in the area 5. Peggy & JP’s salty and oxidative ouillé Jurassic savagnin, a perfect pairing with our Spring chicken with green garlic, peas, and turnips @buronfossejp 6 & 7. Something sly and playful to make sure we’re having fun while working hard
