The 2nd annual “Vertical Brunch Shindig”
(as I have come to call it 🤭). Sometimes simple ideas turn into annual themes…
Three years ago I came across this rare 🦄🍷 by Tom Sherwood winemaker and owner of @bxtwines
He uses local honey (🍯🐝) vs. cane sugar in this perpetual (Solera) project which gives the wine a different feel from normal sparkling wine.
This was a 3-year vertical that allowed us to study the progression of @bxtwines passion project. He produces a lot of other variations of sparkling wines, but this one is special to me. Called “Perpetual Oxidation” only 70 bottles are produced a year 😳.

A massive thank you to our loyal supporters, restaurant, retail and distribution partners. Our largest release to date is all spoken for. We are brimming with gratitude and are humbled by the response to the wines.

New wines will become available in the fall which will include the inaugural release of 1+1=7 ( a field blend of Pinot Meunier, Noir, Gris and Blanc ) and the 2023 @yount_mill_vineyards Pinot Meunier will be disgorged after spending 30 months on lees. We are checking in other wines to see what else may be ready!

🍾 Introducing BXT
BXT was created through the desire to explore Californian viticulture through the lens of traditionally made sparkling wine. Tom Sherwood, originally from Australia, has laid down family and winemaking roots in California over the past decade, and in short order, has produced some truly impressive wines. We're thrilled to bring them to New York for the first time.
Tom works with a number of parcels around northern California, with the majority of his plots farmed by his own hands, and located in and around Sonoma County. Most of his cuvées are single parcel wines, with the exception being his “California Immersion,” which is a house cuvée comprised of grapes from a handful of sites from passionate growers in the area. The entire project stems from the same mentality as the grower Champagne producers Tom admires and from whom he takes inspiration.
Grapes are hand picked, gently whole cluster pressed, and fermented in new and used french oak. The wine ages for 6-9 months in barrel prior to being bottled with yeast and a small amount of sugar. Secondary fermentation takes place in bottle and the wine is then left undisturbed until ready. Bottles are then hand riddled and disgorged on release.
The result are truly small batch, traditionally made sparkling wines that convey the true essence of California terroir.

2022 WHEELER VINEYARD BDB ( 30 MONTHS)
Made with zero dosage or sulfur, the 2022 Blanc De Blanc Wheeler Vineyard is 100% Chardonnay from old Wente clone vines fermented and aged in neutral French oak left to age another 30 months in bottle, Disgorged October 2025, it shows more developed secondary characteristics than the youthful
2023, sleek in apple, lemon skin, and impressively resolved acidity, coming together into a memorably cohesive whole. Aged 30 months on the lees, it’s a truly impressive sparkler from an unlikely place that’s worth seeking. Drink now through 2040.

2023 WHEELER VINEYARD BDB ( 18 MONTHS)
From 100% Chardonnay grapes grown on AXR-1 vines planted to the famed Wente clone, sadly since torn out, the 2023 Blanc De Blanc Wheeler Vineyard has zero dosage, a searing, steely, linear sparkling wine that’s focused in acidity and sharp angles of green apple just beginning to meld onto the lengthy palate. Aged 18 months on the lees, the mousse is lively and still developing, with secondary notes of ginger and pear beginning to show. Disgorged October 2025. Drink best 2028-2030.
A wonderful inventory error meant 5 cases of the 2022 saw 30 months en tirage and will be allocated to mailing list subscribers. The best mistakes.

CONVERSATIONS WITH MY FORMER SELF
The first offering of this new cuvée will available in tomorrow’s release!
From the 2023 harvest, we held back a single barrel of Manley Vineyard Chardonnay to begin a solera expression from this site we personally farm. Aged for 12 months in barrel, this wine had juice from the 2024 vintage added to be the source of sugar for secondary fermentation in bottle. After an additional 12 months on lees, the wine was hand riddled and disgorged with 0.5g/l of dosage. While the aged characteristics of this solera barrel are yet to develop, this is the freshest, most aperitif-inspired bottling we have released. Light on its feet, its youthful energy takes center stage in this “conversation” between vintages.
