Both with a 5* food safety rating by @officialthanetcouncil When starting this journey there was a lot of conversation how or where I would be able to start Margate chef Catering & Hospitality. I didn't even know what or how I was going to do it, but this incredible investment has come from @jessicaleahcatering & @bigpapajames . They are investing in me and my business to give me a space to create, love and work to finally be able to put my vision to the plate running my own business. I'm honestly blown away and blessed to have the opportunity. Sometimes it's not about money its believing in someones dream, to be able to build something special alongside another incredible business is priceless. Those who don't know Jess one of my old exec chefs back when we was in Broadstairs many years ago. She taught me how to implement the Maltese flavour in to my modern British cooking, utilising every ingredients potential for flavour. We was a force with our team, and the respect still remains the same. We're now here back together here in the Costa del margs. With over 50 years of hospitality experience between us. It's safe to say hospitality is in safe hands here in that with all the other incredible restaurants in the food scene. National Chef Of The Year Best Presentation Award 2026 @craftguildofchefs @churchill_1795 Bringing it home to the Costa del Margs ๐ŸŽ‰ Swipe ๐Ÿ‘‰๐Ÿป to see my favourite plate this year Please read below. After a 4 year journey 2 top 40s and 2 top 10s I've finally come home with something to be proud of! Something all the hard work was all worth it ๐Ÿฅฒ๐Ÿซถ๐Ÿป I've been awarded the National Chef Of The Year Best Presentation Award 2026. This is something that I don't take lightly ๐Ÿฅฒ this award was awarded to myself by the people (you guys) by the guild for my presentation of my food on the final to be precise my starter and been recognised nationally. Native Lobster Roll Ramsgate Native Lobster Roll, Yuzu Dressed Claw, Lobster Tail Scampi, Basil Coral Mayonnaise, Tomato Fondue, Lobster Tail Bisque Served on the Alchemy abstract feature plate by @churchill_1795 Im honestly blown away ๐Ÿ˜ญ. I can't thank you enough for the support and encouragement you have given me. I think I speak for the chefs that have put themselves under the amount of pressure and to be able to bring this home to my home town using produce, which is just a few miles out in a national competition just feels me with so much joy. I'm humbled and blessed and can't thankyou enough. Let me be a testament to you! No matter how hard or how much you try or how many times you get knocked down NEVER GIVE UP, NEVER STOP BELIEVING IN YOURSELF! Allowing me to reach the top 10 chefs into this year's competition. Brief to a summer showstopper pre dessert with a savoury element. So nothing better than using the best local raspberries from Kelsey farm, smoked almonds and tarragon one of my favourite combinations. We hate waste, so this is a zero waste product utilising the whole Raspberry ๐Ÿซถ๐Ÿป This dish screams summer!! Full flavour banger, and representing the garden of England and the coast where I live! If I could give you all a spoon i would! Probably one of the best ice lollies you could ever taste!
