@harrison.ginsberg of @overstory shares Radicchio Not Roses, a cocktail that makes Radicchio the star.
Built on a house-made Radicchio & Balsamic “Amaro” –charred chicory, citrus peel, peppercorn, and a touch of balsamic reduction – the drink takes its structure from the classic Americano and grounds it in the agricultural identity of Venice and the Veneto. Lillet Rosé, Savoia Americano, and Gin carry the aperitivo spirit and a Grapefruit Cordial made from Oro Blanco peels brings the lift.
“I wanted to focus on the flavors and drinking culture of Venice and the Veneto,” says Harrison. “Famous for radicchio, and also aperitivo-style cocktails, the concept was to make Radicchio the star.”
Fresh, lightly savory, pleasantly bitter.
