Nothing like a heatwave weekend to announce a Winter cookbook… Two months until #winterinthehighlandsbook is out in the wild! @glendyecabinsandcottages you were a complete joy as always! Another glorious few days cooking with wonderful @carolinegladstone @chasgladstone @gladstone_hellen and their equally wonderful team. No where does the sunshine like Scotland, and no where does hospitality like the good folk of Glen Dye. Such a treat to meet and blether with so many talented and creative souls. Thank you. Recent cooking from @joe_woodhouse fab new book Weeknight Vegetarian. We have made the Cheddar Semolina with Tomatoes after I had a glut of tomatoes leftover from a shoot, and the Asparagus, Black Olive and Spinach Pasta so far and both were delicious! Small hands have gotten involved too and they were both very big fans of the Fried Semolina for their tea 🌱 Thank you Joe - it’s a triumph!

Lemon Cream Pavs and Primroses 🍋 Assembled with help from Ivo from - leftover Lemon Cream from new @aranbakery pastry trials (use the Blood Orange Cream recipe from #aranbook but sub oranges for lemons) - meringues (1 part egg whites to 2 parts caster sugar, baked at 120C) - whipped mascarpone cream (1 part mascarpone, 4 parts double cream, vanilla) - toasted macadamia nuts - honey - primroses

Spring is here, and so is the heavenly latest scent from @ffern.co This season’s perfume is rooted in collaboration with somewhere I have been desperate to visit - @kneppwildland . Soft florals, fresh growth, and something re-emerging, quietly alive! Now to sow some seeds and hope for sun. Happy spring all 🌼🧹🌱

PEAR and CARDAMOM SCONES Makes 8 450g plain flour 50g soft brown sugar 1 tbsp baking powder 1/4 tsp salt 1 tsp ground cardamom 200g cold butter, coarsely grated 125g cold milk, plus extra to brush on top 1 eggs 1 tbsp honey 2 pears, cored and diced Demerara sugar to decorate Preheat oven to 200C. Add the flour, sugar, salt, baking powder, cardamom in a bowl. Coarsely grate the cold butter into the bowl and rub into the flour until you have a sandy consistency. Mix the milk, egg and honey together. Core and dice the pears into small chunks (the skin can stay on). Add the pear and the milk mix to the bowl and gently fold together. Tip onto a work surface and gently bring together to form an 18 disc. Cut into 8 triangles. Brush the tops with a little more milk the sprinkle some Demerara on top. Bake on a lightly floured baking tray for 20 minutes or until golden brown and cooked through. Delicious served with extra thick crème fraiche or clotted cream and @odysea_ltd Fig Compote.

Some of my favourite snaps from #winterinthehighlandsbook. And a wee reminder that lots of the recipes can be used in spring too! These leftover roast potatoes (pic 2), that get refried, the doused with some vinegar and Cornichons would be especially good if you used wilds garlic in the aioli… also a teeny tiny Rosa 🥹🤍 snaps by the dream team of course! @laurajayneedwards @tabhawkins @kempkitchen @rosieramsden @_phoebepearson @kj_mistry @quadrillebooks
