Hope youāve all had a lovely Easter weekend. Just a little friendly reminder Iām back at @pullo.shop this Saturday.
Hoping to finally have some āKatalanerā tartlets on the menu (sister to the āMazarinerā) but instead of the traditional shortcrust pastry - Iām going to use puff pastry š¤š½.
Whilst Iām waiting for the berry season to start (my strawberries are already in bloom at the allotment and are usually ready to harvest in May š), there will be lots of nuts and zesty lemon / lime goodies on the menu plus some berry compote from previous season.

A crumb shot of one of my sourdough Fika House loaves yesterday.
š¾ 50/50 True South West stoneground flour @swgrainnetwork and my own freshly milled wholegrain blend (Mariagertoba @fortescue_farm , Rye @cowshare and April Bearded @chapelhouse_farm ) using my Mockmill Professional. Super squishy, nutritious with a deep full flavour. No faff, no sifting, no complicated formulas, no processed white roller-milled commodity flour, only the good stuff as per usual.
Another crazy pop up at Pullo yesterday š . Semla season is now over for this year. A HUGE thank you to you lovely lot who came down yesterday morning and waited so patiently in the queue, you are bloody awesome! šš»

If you had my Yorkshire forced rhubarb, cardamom creme pat and chantilly cream Princess cake slices back in February - youāre in for another treat!
Hereās another rhubarb version using my own rhubarb and itās a rhubarb & ginger compote, honey creme pat and vanilla bean crĆØme fraiche whipped cream. The Genoise sponge is wholegrain using heritage Maris Widgeon š¾. The crĆØme fraiche gives a lush tang against the sweet honey tones so itās not too sweet, just ālagomā šš».
Iāve just stuffed my face with 3 slices already š¤ but the cakes featured in photo are m i n i Princess cakes, dinky little things⦠although, thatās hard to tell from the photo.
The usual slices with the new flavour combo will be available this Saturday at @pullo.shop and I canāt wait for you to try them š§”.

Just a few photos from yesterday, I was in a rush as per usual, but was so special to have my friend and fellow baker @mariellabliss with me at the market until I sold out. I then took her and husband Ed down to the Passage Inn by the riverside for a cheeky drink š„.
It was a lot quieter at the market than usual but to be expected during a bank holiday weekend.
A massive thank you to everyone who came down and bought sourdough bread and Fika pastries šš½.
Next Saturday Iām back at Pullo and will hopefully have new seasonal Princess Cake slices š¤š½.

Good evening, sharing this Saturdayās menu for @topshamsaturdaymarket (first Sat each month) and a photo by the talented @neilawhitephoto š§” at @thebelltowerstudio last summer.
Iāve got a new bun on the menu and was going to share a photo of it too, but I accidentally baked it without the crĆØme pat - oops š. Itās a sun bun with honey crĆØme pat & a vanilla bean crĆØme fraĆ®che quenelle.
Iāve also made a new dough for the vanilla buns and made something similar a few years back without the cardamom, so the beautiful vanilla bean flavour can shine through more. Please try them & let me know what you think!
The Tosca buns are a little different too, with a new remonce filling. Again, something Iāve made in the past but itās been a while. Been revisiting old recipes from my big, fat handwritten recipe books lately. Yes, I write down e v e r y t h i n g š .

Been a bit quiet on here lately but I have been busy. I taught two great classes recently - a Swedish bun class last week, before I went up to London, and a Sourdough workshop today.
Lots of new info for the new bakers to absorb and take in, lots of laughter, lots of fab questions and discussions, sharing wonderful life stories and experiences, beautiful people coming together to learn and create something magical, whether that be Swedish buns or sourdough bread.
I feel extremely privileged and am so bloody lucky to be able to welcome these gorgeous people into my humble home, teach them everything I love and am so passionate about and to call this my job šš½.
A big shout out to all the participants featured in the photos above who attended the classes, you all smashed it and I loved teaching you! ā¤ļø
