About the Chef • I’m Daniel Joseph Corpuz, a chocolatier and pastry chef based in New York City, and I was born and raised in New York City. Born in 1998, I am now 27. My parents are from the Philippines, making my three younger brother and me first generation Filipino-Americans 🇵🇭 • I started baking in 2010 when I was in 7th grade primarily doing cake decorating. Here I began to do wedding cakes and custom cakes, specializing in sugar flowers • In 2016, I started my college career at @theculinaryinstituteofamerica where I graduated with an Associates in Baking and Pastry and a Bachelors in Food Business Administration • I’ve worked in some @michelinguide restaurants around NYC including @themodernnyc @clocktowernyc @manhatta_nyc and most recently at @onewhitestreet • As a result of COVID-19, I decided to build a chocolate brand @danielcorpuzchocolatier . My chocolate work ultimately landed me an opportunity to be on @netflix new show ‘School of Chocolate’ with @amauryguichon which was an extreme stepping stone for me and the business I am building 🍫 • I have continued to share what I do by doing pop-ups around NYC at @kabiseranyc @brooklyn.pop.up @canalstreetmarket . And in June 2022, I was able to open up @danielcorpuzchocolatier ’s first location in Canal Street Market. • I am a huge huge fan and nerd of @starwars and even collect Star Wars @lego sets. I’ve always been a scholar and academic in school. My favorite colors are grey and blue. ‘Dearest gentle reader, this season’s ‘diamond’ (newest cacao producing region) I visited is Chiang Mai’ 🍫💎😂 • Extreme thanks to Neil of @siamaya_chocolate for arranging visits and meeting with Johnathan of @cacaorepublic.th and Pathom of @pranacocoa ! It was an amazing opportunity to also meet and speak to MK of @chocolatecultureclub and Jane of @khom.chocolatierhouse all of whom have shared their knowledge and inspirations as I am introduced to Thai cacao for the first time. • My trip is nearing its end (*internally crying🥲) with a week left, but with 50+ kg thus far of chocolate and beans, so I am excited for the new flavors and unique chocolates coming soon at the shop @danielcorpuzchocolatier and at the chocolate lab @iceculinary !

Here is my ‘Proof of Life’ 😂: I have been traversing through Southeast Asia visiting cacao farms 🍫🌳 • I am extremely grateful for Sheila and Ken of @cacaocultureph , Mary Grace and Nel of @belvizfarms , Louie of @godel_chocolate , @reenughh of Rosaroso Farms and Sir Rex of @malagoschocolate who have shared so much about the processes of growing and fermenting, and the perspectives of farmers as they too navigate the volatile market that is cacao • I am hitting the halfway point of my trip and cannot express how much I have learned and am excited to share it through our bonbons at the shop @danielcorpuzchocolatier and through my classes @iceculinary !
