If in last 29 years of cooking I have done a favour to myself is this .. I am not ur hero, not ur poster idol , I am just an artist who wanna cook, perform and be myself !! And judge us ? Are we good enough ? When I write a menu I take a pen and each color is a different day different hour. It’s a 3-4 months of writing , imagination, creativity, inspiration and day dreaming .. In 2013 we started our journey with asias50best and It’s overwhelming and honestly unexpected. From 2015 we have been no1 (5 times) and never lost the 🔝 5 position. I feel a little ashamed of taking another spot, which could have been someone else in this year’s asia’s50best But it’s a rewarding space because only Gaggan belongs to @drula9 @kanojiarahul @costa.fdf @ti___kittisak & me. The other two restaurants belong to @rydo.anton @dej_kewkacha @vixthechef @hernan.villalva95 and their team. It is where the next generation took my philosophy and made it their own, and they have got here on their own merit. From an Individual we have become a strong hospitality family. Also Thailand has got so many amazing restaurants that have pushed their boundaries and together we have proven that bangkok is among the top Asian cities for fine food This list is very volatile and past winners have not stopped cooking good food just that everyone wants to see changes in the list .. and to be “Warrior Strugglin’ To remain Consequential” has been an inspirational personal journey for me !! How do I best describe an experience at @gaggan_anand ? Was it Mad? Yes Did it make me uncomfortable at times? Yes… Very Would I remember it 30 years from now? Yes Will it be your usual expectation of a @theworlds50best or @michelinguide experience? NO Should you experience it once in your lifetime? Most Definitely So much thought has gone into each of the 25 bites by Gaggan and his team, I think it only fair to give snippets of my experience through some pictures because a reel would not allow you to examine the complexity in simplicity of each dish that I chose to post in random order. I will sum up what I felt about the night with the following quotes and leave you to interpret it as you wish. “Never limit yourself because of others’ limited imagination, never limit others because of your own limited imagination.” “Imperfection is beauty, madness is genius and it’s better to be absolutely ridiculous than absolutely boring.” “Without deviation from the norm, progress is not possible.” “Nothing is ever as simple as it seems. “Lick it up” at Gaggan, Asia’s Best Restaurant 2025!! How many times can I eat there? Well, how many times can we do concerts in a year? Rebellious-dining, sometimes misunderstood; agree, the idea of experiencing Gaggan with 13 other strangers may not be most comforting. But surrender your ego at the entrance, suspend judgement, bring childlike inquisitiveness (and hunger) and genuinely want to enjoy, those 3hrs will be one of the best dining experiences you can have. Dining at Gaggan isn’t meant to be ordinary. Gaggan himself described it to be “Love, Pleasure and Pain”, go figure… If it was ordinary, it won’t be Asia’s Best, it won’t attract guests from all over the world who plan a trip to Bangkok round their reservation at Gaggan. Same is said about the food Team Gaggan puts in front of you. It will be rogue, mind warping, WTFs underpinned by deliciousness defined by Gaggan, not us. For me, it is flipping the bird at norms, fine dining, conformity, that’s why we are uncomfortable. If we want ordinary and usual, there are plenty of restaurants everywhere clamouring for your attention. Has Gaggan Anand mellowed? Maybe he has matured (giggles), but that iconic spunk reigns. This 4-chapter menu showcased Gaggan’s versions of India, Thailand, Japan and communal; there was some serious eating involved, not kidding. You need to take a closer look at each course, listen properly to the explanation to appreciate the ideation and flavours. These weren’t Masala, Larb or Chicken Skewers. Look at the pictures, look at the bloody effort! I am a big of Gaggan’s. The culinary universe is big enough for wizards, geniuses, Gandalfs, Jedi Masters, as well as Darth (some said Dark) Vader, “He who shall not be named” and Gaggan Anand. A major re-imagination of Gaggan (restaurant and concept) is underway. Gaggan calls it “a transtormative evolution, akin to a phoenix rising trom the ashes” in his latest post. It’s mysterious and almost sounds like a new Spa for a Gaggan-wellness program! We shall see. Doors reopen from May onwards, make sure you secure your seats early, I hope to sit next to you… #noneedmeepok @gaggan_anand
