Two years ago, East London-born Chef Vix Rathour quietly booked a table at CoCo Dining Saigon โ€” aware of its burgeoning reputation but low key about his visit. Not long before, thanks to a pandemic-era DM slide of Gaggan Anand, the illustrious Bangkok based chef โ€” the original Gaggan restaurant had been named Asia's Best Restaurant four consecutive years (2015โ€“2018) and peaked at No.4 on the World's 50 Best list in 2019 โ€” installed his erstwhile protege (think a Obi Wan and Luke Skywalker dynamic) as head chef at his new project with Louis Vuitton (ably supported by Asia's Best Pastry Chef 2025, Dej Kewkacha). From East London to @gaggan_at_louisvuitton โ€” via @theritzlondon โ€” Vix Rathor has had quite the ride. And he has a professor to thank for the first step. โ€œHe really set me on my way,โ€ Vix says, still beaming at the memory of David Foskett, who taught him at university before clocking something worth nurturing. Foskett had noticed the East London connection โ€” Vix went to the same school as a certain @davidbeckham โ€” and recognizing potential in the young chef, placed him at the Ritz, London. โ€œIt blew my mind,โ€ Vix remembers. These days with @gaggan_anand at Gaggan at Louis Vuitton in Bangkok, he opens the meal by compelling guests to lick their plates โ€” just as they do at sister restaurant Gaggan, currently No.1 on @asias50bestrestaurants list. โ€œEveryoneโ€™s giggling and laughing. It kind of disarms everyone,โ€ he explains. Some flavors of home, though, are harder to replicate. Fish and chips, specifically. โ€œI love it. I miss it,โ€ he says, with a nostalgia thatโ€™s entirely genuine.
