POTATO & COURGETTE ROSTI Rosti > hash brown any day of the week Perfect weekend brunch idea💡 INGREDIENTS (Serves 2): - 2 Medium Potatoes, skin on - Half Courgette - Half Onion - Fresh Thyme - Sea Salt & Black Pepper - Extra Virgin Olive Oil (EVOO) - Fried Eggs, to serve - Parmesan, to serve METHOD: - Grate the potato, courgette and onion into a bowl. Tip the gratings into a clean cloth, and then squeeze and ring the cloth to draw out as much moisture as possible (drier mix = crispier rosti!). - Tip the mix back into the bowl and add thyme leaves, sea salt and black pepper. Combine. - Heat a little EVOO in a frying pan (20cm-ish diameter) over a medium heat. - Add in the potato-courgette mixture and use the back of a spatula to flatten it evenly and fill the base of the frying pan. - Allow the base to crisp up and go golden (7-10 minutes) - you’ll know it’s almost ready by shaking the pan and the rosti doesn’t stick. If it’s still sticking, trickle a little EVOO down the sides to oil the base of the pan again. - Carefully flip the rosti onto a plate and return to the pan with the uncooked side now facing down. - Repeat the cooking process until this side is now crispy and golden. - Serve with fried eggs, thyme leaves, Parmesan, sea salt and pepper.

GREEK LEMON CHICKEN ORZO 🍋✨ One pan, full of flavour and the kind of dinner I made last night and already want again tonight. Crispy golden chicken, creamy orzo, salty feta and loads of fresh lemon. Ingredients: • 4 chicken thighs • 1 courgette, diced • 1 yellow pepper, diced • 1 small onion, diced • 3 garlic cloves, minced • 250g orzo • 700ml chicken bone broth • Zest of 1 lemon • Juice of 1 lemon • Olive oil • Oregano • Salt & black pepper • Fresh parsley • Crumbled feta Method: Coat your chicken thighs in olive oil, garlic, oregano, lemon zest, salt and pepper. Place skin side down in a pan over medium heat to slowly render down the fat, then turn the heat up slightly until the skin is crisp and deeply golden brown. Turn over for 2 minutes, then set to one side. In the same pan, gently sauté your courgette, peppers and onion with a pinch of salt until soft and sweet. Add your garlic, then stir through the orzo so it can soak up all that flavour from the pan. Pour in your chicken bone broth, nestle the thighs back in so they aren’t fully covered, then simmer for around 20 minutes until the orzo is creamy and the chicken is cooked through. Finish with fresh parsley, crumbled feta and a generous squeeze of lemon juice. Save this for your next easy midweek dinner 🤍 #easyrecipes #healthyrecipes #onepanmeal #mediterraneandiet #orzo high protein bone broth

These muffins go down a treat for me and River! Wholemeal spelt flour provides fiber which supports digestion. Spelt is also an ancient grain, so it’s easier to digest than standard flour. Apples and blueberries promote a healthy immune system with their antioxidant content, as well as vitamin C .Extra virgin olive oil offers healthy fats for brain development, and the eggs provide essential fats, protein, and important minerals like iron and zinc. All important nutrients for growing bubs. ❤️ 🌾 1 cup wholemeal spelt flour 🍎 2 medium apples, peeled and grated 🫐 1/4 cup blueberries (fresh or frozen) 🫒 1/2 cup extra virgin olive oil 🥚 2 eggs 🥄 1 tsp baking powder 🥄 1/2 tsp baking soda 🤎 1/2 tsp cinnamon 🤎 1/4 tsp nutmeg 🥛 1/3 cup milk (I used cashew, but any would work). Recipe makes 6 large or 8 medium muffins. ~Preheat the oven to 175°C and line muffin tins with greaseproof paper. ~Grate the apple and squeeze out as much moisture as you can. ~Mix Dry Ingredients:spelt flour, baking powder, baking soda, cinnamon, and nutmeg. ~Mix Wet Ingredients in a separate bowl:extra virgin olive oil, eggs, grated apple, and milk. Add the blueberries last. ~Slowly add the wet ingredients to the dry ingredients. Fold together gently, being careful not to overmix; this will help keep the muffins light. Fill muffin tins and bake for 18-20 minutes. Insert a toothpick in the center, and when it comes out clean, they are done. 🫶 *These will last 4 days in the fridge; alternatively, freeze them and take one out the night before to let it defrost. *With the extra virgin olive oil, because it is high in antioxidants and polyphenols, it makes it stable at baking temperatures and won’t oxidise. Brands I use: Spelt flour @dovesfarm Blueberries @_packdco Extra virgin olive oil @citizensofsoil

We’re back! First event of 2026 (better late than never ay) and we’re going straight in at the deep end - the state of hospitality right now. Hospitality is having a real time of it. And yet - there’s still so much good stuff happening. Join us for an afternoon with people from all corners of the industry. Between them they’ve built, staffed, fixed and reimagined some great places - and they’ll be talking honestly about where it’s all at, the highs and the lows, and what it actually takes to make it work. Huge thanks to our friends at Williams, Stanley & Co for supporting this event - They’ll be sharing their take on the numbers, and also running free 1-to-1 finance clinics from 2pm (before the panel talk). As always, there’ll be plenty of time to chat and connect after the panel talk when we’ll head up to the @workatprojectsuk rooftop for drinks and food - all included in your ticket. On the Best Before panel: - Tom Zahir @tomzahir @decaturlondon - Lauren Linford @_homehospitality @actuallygoodtm - Liam Cotter @liamcotter @voya_brighton - Gary Digby, Digby+Fox + final speaker TBC More to come on these guys over the coming weeks. Earlybird tickets available for a week or so (or until they’re gone) - get yours via the link in bio.
