SURFACE TO AIR
We’re over here shoehorning a stinger into a colada. And it’s barely spring. Wishful thinking.
But in the most seshy and breezy way. If we were being really true to our namesake (Crystal Voyager, 1973) then we’d be a surf shack slinging hurricane glassware and parasols. But we’re not. So this is about as club Tropicana as we’ll get.
Banging though.
It’s also the only signature drink of ours that has also been published in a cocktail book. But really, it harks back to a time when @liamcotter was working with @barbarossa_inan in his first bar in dalston (@highwaterlondon ) in one of their first menus.. great bar then and still a great bar now, testament to dedication to a great team over the years.
RECIPE:
30ml @ramsbury_distillery gin
20ml Koko Kanu
20ml Lime juice
15ml Pineapple
10ml sugar syrup (1:1)
15 dashes of branca menta
—> shake and coupe it.
It feels a bit like a daiquiri, with fresh menthal coconut vibes.
Not quite too sweet to be naff, nor is it classy enough to care.
Obligatory end of season thank you to everyone who has come through in the last few months to make this place feel special.
We ain’t nothing without the people.

When we opened up the doors to the second instalment of @voya_brighton it was a case of fine tuning the music and that meant sorting the brains of the operation, meaning full flexibility of whoever is rotating and full headroom for however we expand it. @mastersounds radius 4 is a beauty and does it all, while still being super fun. A masterworks of @officialmarvingayemusic to bed it in.
