200 YEARS OF MASTER MILLING
We've been milling flour in Chelmsford since 1824. We started out in Broomfield Mill, then milled at Moulsham Mill and finally moved to Chelmer Mill which was built in 1899, and where we still are to this day. Our mill, just like our flour, truly has stood the test of time.

DESIRED DOUGH TEMPERATURE
Monitoring the temperature of your dough is crucial, as it controls yeast activity and governs the dough strength.
Too warm and it will react too quickly, leaving it with a weak structure. Too cold and fermentation will be slow, leading to a dense crumb.
An instant-read thermometer like this is the bakers' best friend!

BAKER'S ORIGIN
We visited our good friend Kate O’Shea over at her bakery – Tough Mary’s Bakehouse. We’ve been supplying them with flour since the early days and here’s her story ☝️
Fun fact in her own words: “Tough Mary’s comes from a song by Etta James. Mary is my middle name, and it’s my mum’s middle name and my granny’s middle name, and probably lots of other women in our family too. My uncle has a pub in Ireland, and when he heard I was opening a bakery he said, ‘Kate, if you’re going to have your own business, you’re going to need to toughen up.’ It all just seemed to make sense, and I thought it would be a fun, memorable name. It’s like my daily inspiration to be a tough Mary.”
