Tonight’s dish hits different. @chef_delosso and our 12th Street Catering team had the honor of partnering with students from Randolph High School through Careers through Culinary Arts Program to bring a course to life for the annual Philly Pheast. On Friday, these incredibly talented young chefs stepped into our commissary kitchen to prep their featured dish: char-grilled octopus with romesco, shaved fennel, potatoes & saffron aioli. And tonight, they’re serving it. This is what the future of hospitality looks like. What sets Philly Pheast apart? Our students are part of every course on the table. @preservingthesouth stopped by @saulhighschool to work with students on a trio of pickles: Mediterranean giardiniera, pickled chioggia beets & fennel with tangerine, and spicy cumin pickled carrots. These will be served at Philly Pheast on April 27, our annual fundraiser and awards dinner will also honor @lynnie_buo . Very few tickets left at the link in bio. Rescued food, real impact. 💯 Today I brought vegetables from @SharingExcess to Audenried with @CCAPPHL for a lesson on food waste, sustainability, and how rescued food can still become something delicious. Then we took those veggies into the kitchen, roasted them, made a sauce, and let the students do the final review. 🌱
