@chef_lance_mcwhorter ’s Delicata Squash is a whole experience! Stuffing it with @ansonmills Farro Verde and @bentonsbacon country ham and then fire roasting it is just the beginning, because when it lands on your table chef is right behind with a pot of absolutely delicious aligot made with Jimmy Red Corn grits and Gruyere cheese! CHEF SPOTLIGHT! @treatgod 💡✨ When Chef Elaina Ruth is around, good times & good food are guaranteed. We’ve been lucky enough to cross paths with @treatgod on several occasions, and every time we have a better day for it. She is like joy in human form, and her food follows suit. A quiet standout on the menu: Anson Mills Grits with Herbed Mascarpone. Chef @hseanbrock has long championed Southern heirloom grains and these yellow grits from Anson Mills are about as good as it gets—slow-cooked, deeply flavorful, and finished with a touch of herbed mascarpone.

Taste of the South at High Hampton was wonderful, whirlwind of a weekend! The food was flawless, and the company couldn’t be beat. Industrial “modern” milling has NO CHILL — but we do, literally. Staying on-theme with the winter weather, let’s discuss “cold” in a new context: COLD-MILLING!  Scroll down for Insider info about our cold-milling and swipe through for some of our chef-made favorites from winter menus across the country! 🥶🌾❄️  BEAT THE HEAT: When it comes to quality milled goods, heat is PUBLIC ENEMY NUMBER ONE! Conventional roller milling prioritizes two things: speed and shelf stability. High‑speed roller systems generate frictional heat that essentially “cooks” the grains during the milling process. High milling temps kill live enzymes and natural oils, in turn, stripping heirloom grains of their field-fresh flavor, aroma, and nutritional excellence.  PRESERVE THE GERM: The word “germ” gets a bad rap. When it comes to grains, THE GERM IS WHERE THE GLORY IS: the nutrient-dense heart of each kernel. When industrial roller milling became widespread in the early 19th century, it brought with it techniques that transformed grain processing by removing the germ altogether. Milled goods came to be thought of as shelf-stable products, instead of perishable, flavorful ingredients. At Anson Mills, our motivation for cold-milling is maximizing flavor, aroma, and nutrition. Our grains are “aerobic” (a fancy way to say living and breathing), and we keep them that way pre AND post-milling. We custom mill all ingredients from frozen new-crop grains at temps ranging from -10°F to -50°F. LOW AND SLOW: Our heirloom grains don’t vibe well with high-heat in milling, storing, NOR cooking. Our ingredients are not shelf stable, so store them cold! When cooking, continue to keep cooler temps in mind. Our kitchen motto? “LOW AND SLOW!” A good soak not only cuts down cook time / facilitates low-heat cooking, it also results in a beautiful soaking liquid full of flavor, creamy texture, and nutrition. We call it liquid gold. Get that simmer started using the soaking liquid, and AVOID THE URGE TO BOIL. Long soak + low heat + slow cooking = the winning approach, always.  Happy holiday season, y’all!
