@zero.zero.store gets the filling right in a way most sandwich places in Amsterdam don’t bother attempting. Salami piccante with nduja is a combination that requires confidence. Nduja is fatty, and intensely spiced, it dominates anything that can’t stand next to it. The salami does. The balance between the two is precise and the depth of flavour is genuinely one of the better things we’ve eaten in the city recently. The schiacciata is the single thing standing between this and being exceptional. Soft when it needs to be crispy, which means the textural contrast the filling has earned simply isn’t there.
