In catering, the rhythm is always shifting - seasons change, teams evolve, and we’re constantly welcoming new prep cooks while saying goodbye to others. It’s just the nature of the work.
But every so often, someone stays long enough to leave a real lasting imprint.
@xtrascallions was one of those people.
For nearly four years, Nick was a constant. He executed all sorts of projects with minimal direction (and somehow executed them exactly as they needed to be) and brought a level of skill - especially in butchery, sauce making & oyster shucking - that elevated the quality of our food, and the work of those around him. He was a leader on the team, helping welcome and train new members, but he never acted superior to anyone.
And then there was fermentation. What he built in that realm fundamentally expanded what Snap Pea could be. It’s what allowed us to show up to a collaboration dinner with Sandor Katz with a larder of more than 40 different ferments to pull from - something that never would have been possible without him. And that kind of contribution doesn’t disappear when someone leaves. It becomes part of our DNA.
Nick - I wish we weren’t saying goodbye, but I feel so excited about what the future holds for you. We’re grateful for everything you’ve brought to Snap Pea - there’s no question that you made this a better place. We sure are gonna miss you, and we just hope that we get the chance to welcome you back sometime soon!
