We are honored to partner with @venetianvegas to bring to life a COTE tailor-made for the city of opulence and grandeur. Opening a COTE in Sin City is not only a dream of ours but for @simonkimnyc itâs also a triumphant homecoming â an homage to both his alma mater UNLV and his first formative job in hospitality, which happened to be in Las Vegas.
For our West Coast debut, we are so proud to once again partner with @rockwellgroup to design a dining experience like youâve never before seen â immersive and theatrical; fully transporting you into our world. Our philosophy remains untouched â to marry the conviviality of Korean BBQ together with the hallmarks of a classic American Steakhouse with endless emphasis on excellence in gastronomy and hospitality.Â

Designed as the perfect ending to the Bar Chimera experience, the menu draws inspiration from nostalgic sweets, English tea time, and flavors that feel both familiar and completely new.

Classic desserts, reimagined through the Bar Chimera lens that are comforting, playful, elegant, and a little unexpected all at once.

We recently celebrated the opening of @550Madison âs new @BarChimera and @COTEKoreanSteakhouse (Cote 550) and today, you can read more about the design from @SamuelCochran in @archdigest !
The dining concept at 550 Madison includes three different restaurants: Bar Chimera, a ground floor Midtown brasserie organized around the idea of the extension of the public plaza with three distinct bar experiences that together create an elegant and convivial environment; Cote 550 in the lower level; and @newyork_sushi_yoshitake , a mezzanine level sushi omakase restaurant coming later this fall.
Each restaurant invites guests into a distinct world and experience; the throughline is how we honored the legacy of the landmark building and the preservation of much of its existing materiality and bold details. Weâre excited to bring an entirely new dining experience to Midtown Manhattanâone that extends the lively experience of the neighborhood and public realm to the indoors.

What a thrill itâs been to witness Simon Kimâs talent up close, starting in 2013 with his first restaurant Piora (slide 4, throwback) to last weekâs opening of 550 Madison. Simon is a world-builder, whose devotion to his team is second to none.
Piora means to bloom, and bloom he has, as City Harvest recognized by honoring him last night at its 2026 Gala: Shaken, Not Stirred. To know him is to love him, as fans of @cotekoreansteakhouse and @coqodaq can attest. Congratulations SK! Real sees real đ
