The EASIEST Crispy Roast Potatoes!🥔 🥔
Honestly this recipe works each and every time, no par boiling, no pre warming oil, this 👏🏽recipe 👏🏽needs 👏🏽to👏🏽be👏🏽saved!
5 Maris Piper Potatoes
Sprig Thyme
6 Garlic
2-3tbsp Oil
Salt
1. Peel potatoes and cut into odd shapes
2. Microwave for 10 mins full power 800w
3. Shake around potatoes and add to air fryer
4. Add microwaved potatoes oil thyme salt and garlic
5. Air fryer at 180 for 30 mins

Soft & Super Fluffy Blueberry Pancakes
This recipe is perfect each and everytime and I absolutely love this drenched with maple syrup and a block of butter! Somedays you need a good pancake and today was one of those days!
200g self raising flour
150g greek full fat yoghurt
2x medium eggs
100ml milk
50g sugar
150g blueberries
Mix all the ingredients together for the pancakes until you have a thick batter, using a non stick pan, add butter and oil and allow to froth, then spoon lay a spoon in pancake batter, top with blueberries and cook for 3/4 mins on each side until cooked and blueberries turn jammy. Serve with maple syrup.

I can’t believe I’m back on @masterchefuk in what will be the 20th anniversary of appearing on the show myself. Tonight I’ll be alongside two beautiful friends @shelinacooks and @brin.pirathapan . It’s crazy to think all those years ago this changed my life and today of all days coincide with the publication of my seventh cookbook, without Masterchef none of this would’ve been possible. Mauritian Crepe Salée
Savoury Crepes + Spicy Chutney (Satini)
1 cup plain flour
½ tsp turmeric
1 tsp garlic & ginger paste
2 spring onions, finely sliced
Salt to taste
Water (enough to make a smooth pouring batter)
Oil for pan-frying
Spicy Mauritian Satini (Tomato Chutney)
Ingredients:
4 small tomatoes
2 red Birds Eye chilli’s
1 garlic clove
1 small sprig coriander
Salt to taste

Coconut Sago Pudding 🇲🇺
The chewy, bouncy Mauritian treat I grew up eating after school with a cup of vanilla tea. Made with tapioca pearls and coconut milk, then rolled in coconut so they don’t stick soft, sweet and totally addictive! Naturally vegan and gluten free!
Ingredients
200 g sago (small tapioca pearls)
480 ml water (for cooking the sago)
350 ml coconut milk
100 g sugar (adjust to taste)
1tsp vanilla extract
100 g desiccated coconut (for coating)
In a saucepan, add the pearls water and coconut milk and cook until the pearls turn translucent.
Add vanilla and sugar until the mixture thickens and turns glossy.
Pour the mixture a tray and set for 4-6 hours until firm
Once set cut into small pieces and toss or roll them in desiccated coconut to prevent sticking.
Keep in an airtight container in the fridge they stay soft, bouncy, and delicious for up to 4–5 days.
