NASI KANDAR AND ROTI First meal in Malaysia! I crave Nasi Kandar, curry rice. Arrays of curries and sides for you to create the ultimate plate of flavour bomb. You normally find this in Mamak stall all over Malaysia. Shout out to Mell’s Bistro in Quill Mall round the corner from our hotel @ormondhotels I recommend choosing white rice then my go to is fried chicken, turmeric cabbage, crispy cabbage or bittergourd, salted egg and this is important, mixed curry sauce (kuah campur) the different curry sauces makes this dish! At @ping.athome we try to recreate the elements of Nasi Kandar with various curries and sides. Taking inspiration back for menu creation. My kids go to is plates of Roti Canai with egg or plain and this time the guy there recommended Mee Goreng Cheese! All washed down with iced cold Teh Tarik! Honestly Malaysian food is the BEST! MAKE IT A SANDWICH We @ping.athome deliver the fried chicken cold and it heats up beautifully in the air fryer or the oven. The coating is spiced and crispy! I always make more just to make this sandwich! Has to be toasted bagel as the chew paired with the crispy chicken, crunch of the coleslaw, hint of garlicky aioli are something should be enjoyed on a regular basis! BREAD SAUCE CROQUETTAS Post Christmas food is where I come alive and I'm telling you, you gotta make a batch of bread sauce or buy them just to make this! @nigellalawson bread sauce recipe is the best! This comes about when Ben @somerset.foodie and I designed our demos on Christmas leftovers earlier in the month! Goes perfectly with @ping.athome Tomato and Ginger Sambal Ketchup which is available online to buy on Ben's website! Tips: Make yourself a dirty martini or your tipple of choice! Chill the mixture well. Wet your hands to ball the mixture, double panko the balls to give better coverage and it is easier to fry. Don't fry on too high a heat! SMOKED SARDINES I love sardines and this is my current favourite way of eating them. Do this in front of your guests, set on fire, add a drizzle of our @ping.athome Smoked Szechuan Chilli Oil , turning a great can of sardines to an extraordinary can of sardines. The flavour is like having fresh sardines bbq straight from the beach! Eat with plenty of good bread and great company. Thank me later! Our oils are made with cold pressed extra virgin rapeseed from @fusselsrapeseed , less than a mtr from our kitchen. Handmade in small batches and I have got some DMS where you can buy in London.
