10 years to the day. It was a particularly stressful service and post service in the kitchen. I stayed late, alone, to gather my thoughts and pickle some fresh water lilly stem, as you do. 4 different combinations yielded massively different results, who knew the pandanus would turn them jet black, but still delicious!

This dinner has been years in the making. A a collaboration between the three Fleming brothers: @shanflem (from @lotonehundred ) with food, Mike with wood and Liam with glass. Be mesmerised as the culinary and art worlds blend like never before.
Drinking and dining from handmade glass and wooden pieces, together with a curated menu of intriguing native flavours by Shannon, are set to make this meal truly unique. Each course will be paired with beverages by the team at LOT.100, including local heroes @78degreesdistillery and @mismatchbrewing and good friend @bkwines . Well-known glass artists Tim Edwards and Nick Mount – Liam’s studio partners – are set to feature as well, joining guests and presenting a selection of works in the glass gallery.

Needed some food inspo tonight and stumbled across this photo of possibly my proudest moment as a cook. Not in a world class restaurant or even a kitchen at all, it was in the back streets of a remote community in the NT. Magpie Goose, over fire, a simple bent piece of mesh, some Karkalla kimchi. A small audience of locals watched and then politely snuck in to grab the legs once cooked, the most favored part. Smiles and thumbs up all round. Simple. Perfect.
