Coming Soon: Mark Best To Open Infinity, the Next Era of Sydney Tower’s Revolving Restaurant
The celebrated Aussie chef wants you to come for the view – and stay for the hospitality.
“Look, I’m confident enough that my offering will match the view, how’s that for hubris?”
On August 13, it will reopen as Infinity by Mark Best. “It’s not going to be Marque 2.0, you can’t cut and paste. You have to see what the building needs. You know, it’s a very specific premises – as are all restaurants – and you need to go and see what feels right, look at the demographic, see what the building means to the city.”
As for the menu: “I just really want to showcase Australia on a plate, without being, you know, nationalistic or jingoistic – or all the -istics. You know what I mean? Like, without being glib about it, it will represent my experience as a Sydneysider. I live up in the Cross, I look at the tower every day. So it’s my experience as a chef, living and working in this amazing city.” @broadsheet_syd@infinitysydneytower@jenkwoklee@tony.panetta@mr_sandrosposato@alongcamepollywithwine@chef_achuta

From our elevated setting comes a grounded philosophy: celebrating local produce in every dish that we serve.
Experience a small snapshot of Australia when you dine with us above the clouds.
Creativity is not a gift; it is a process. 🧑🍳 ✨
At the Our Food Stories – Teaching Creativity workshop, @markbest offers a rare insight into the disciplined thinking behind some of his most celebrated dishes from Marque and @infinitysydneytower .
Through a series of case studies, he unpacks where ideas begin, what gets refined or removed, and how structure ultimately shapes flavour, texture and meaning on the plate.
This is more than a cooking demonstration; it's a rare insight into culinary authorship.
Gain a deeper understanding of how balance, contrast and restraint work together to create clarity. How a strong, personal point of view is formed. It’s an exploration of creativity as craft, offering both inspiration and a practical framework that can be applied well beyond the kitchen.

Last week, we had the pleasure of hosting the 75th Anniversary of @penfolds Grange - an unforgettable evening led by Penfolds Chief Winemaker, Peter Gago, with a bespoke menu by @markbest , created exclusively for the occasion.
A standout for the night was our Head Sommelier’s selection: the 1990 Grange, now featured on our wine list.
Thank you to everyone who joined us to celebrate a legacy.

So good to spend time with Jamie @sydney_urchins this morning. All of their catch is harvested right here by hand along the pristine coastline of NSW. No need to look any further than your own backyard for incredible fresh Uni or Kina. Wonderful to have them onboard as one of our featured suppliers for PERSPECTIVE @infinitysydneytower for this years @vividsydney
PERSPECTIVE is a 90-minute, multi-course dining experience set inside Infinity by Mark Best, high above Sydney at the top of its iconic tower. As the restaurant slowly rotates, so does the story – each chapter of the menu tied to a distinct landscape.
The evening unfolds across three worlds:
URBAN
The city below. The energy, the texture, the built environment of Sydney at night.
MARITIME
From the Sydney Harbour to the stunning maritime-influenced Hunter Valley as it comes into view. The brine, the breeze, the ocean
REGIONAL
Great dividing range & beyond, the horizon stretches further over the mountains and cool climate areas of New South Wales.
