Having opened their first site in Covent Garden in 2010, @Dishoom has since become one of the UK’s most important restaurant chains with 8 sites around the UK. Their focus on offering an immersive dining experience for their patrons - one that harks back to the Irani cafes of Bombay - is something they have become renowned for.
After a turbulent 15 months Dishoom’s co-founder Shamil Thakrar talks dinner, poetry and family as he looks forward to welcoming guests into his world once more.

Following a delayed launch, restauranteurs Jeremie Cometto-Lingenheim and business partner Chef David Gingell eventually opened their expansive bakery and @jolene_hackney sister site, Big Jo, last September. Representing the next step in their mission towards creating a truly sustainable food system, the project depends on a series of likeminded individuals to advance their mission further - none moreso than Andy Cato.
@Wildfarmed , founded by Cato, has been integral to the mission.

The BAO brand has long been synonymous with a meticulous attention to detail; from carefully curated spaces to flawless plates, the brand has grown to become one of the city’s most discernible. In 2020 this growth culminated in Cafe BAO. Located in Pancras Square, the group’s largest site promised an opportunity to display every element of the BAO brand from bakery, through to a workshop and dining space.
With seemingly endless waves of restrictions disrupting Erchen Chang and the team’s original opening schedule, they were forced to challenge their usual creative process as they sought to implement a takeout offering (@riceerror ) that lived up to their high standards until they can open their doors to the public.

With his business in jeopardy as lockdown was enforced, Ben Walgate’s lifelong ambition to own and operate a biodynamic vineyard, Tillingham, was under threat. As months passed, with their rooms and restaurant temporarily closed, Ben and the team at Tillingham were presented with an opportunity to focus solely on the land, the biodynamic treatments and fundamentally the grapes, as they pushed on to reap the rewards of their first ever harvest.

During his 15 years running Da Maria Pasquale Ruocco has faced many hardships, but none have come close to what he has had to overcome over the past three months. More than a family restaurant, the tiny trattoria is an ode to his hometown and subsequently his football team, and offers a place for Neapolitans like himself to call home in London.

When the 4th of July rolled around for Jay Patel and the team at Legare, it became evident that without adequate PPE supplies it would be impossible to open their neighbourhood restaurant in a responsible manner. With this delayed reopening, Jay reflects on how he will adapt the compact restaurant space in a post Covid world and how maintaining it’s warm, welcoming atmosphere important for staff as much as the customers.

For Emma Piggott and Jonathan Mercer, re-opening The Prince Arthur on July 4th wasn’t about making up for lost time and recouping as much money as possible. Understanding the responsibility on their shoulders as landlords in their community, they implemented extensive precautionary measures to ensure that the safety of their team and their patrons was paramount.

For @sertacdirik and his brother Ferhat, co-owners of Mangal 2, shutting their doors has allowed for a complete overhaul in order to best equip themselves to move forward. By adapting menus, cutting covers and hiring new staff, Dalston’s most famous Turkish restaurant has taken advantage of the imposed downtime as an opportunity to usher in a new era for their family restaurant.
