👨🏻🍳🔪🍝We’re excited to officially welcome Evan Churchill to Osteria Mattone as our new Executive Chef!
Evan brings experience from incredibly respected kitchens across New Orleans, Austin, Denver, and beyond, including @osterialupo , @domenicarestaurant , @clarksoysterbar , and @hotelstvincent . Along the way, he’s opened restaurants, led high-volume teams, curated delicious menus, and developed a reputation for disciplined execution in demanding kitchens.
Recently, as Chef de Cuisine at Osteria Lupo in New Orleans, Evan helped lead the restaurant to Michelin Recommended recognition in 2025.
What stood out most to us was not only Evan’s résumé, but also his work ethic and clear love for the culinary arts. From our very first conversations, he felt like a natural cultural fit for the company we’ve worked hard to build: team-first, detail-oriented, collaborative, and grounded in genuine hospitality.
We’re thrilled to have him leading the kitchen at Osteria Mattone and excited for what’s ahead. Please help us welcome him to the team.

Ever wonder where the “RO” in my company name, @rohospitality , comes from?
It stands for “Reckless Optimism,” which honestly still feels about right 15 years in. You have to be a little reckless to open a restaurant. And you definitely have to be optimistic to keep showing up, year after year, believing in people and leading through the next good shift, and the next, and the next, and the next.
Because that drive towards the next shift is the whole game, executing with excellence today so we have the gift of a chance to do it again tomorrow. That’s what our restaurants are built for. Kaizen.

Jessica first joined Table & Main as a culinary intern in 2012. Since then she’s grown with us, led with dedication, cooked at the @beardfoundation house, represented us at @chswineandfood , helped guide our Table & Aid efforts during COVID, and become one of the most trusted people in the R.O. Hospitality family.
After welcoming two children 👧🏻👶🏻, Jess stepped back from daily kitchen operations and now brings that same care, experience, and steadiness to our front-of-house team two days a week.
Fourteen years in this business is no small thing. Fourteen years with one restaurant family is even rarer.

⚽️🏆The World Cup is coming to Atlanta, and I don’t think most of us fully appreciate the size of the opportunity.
To put this in a perspective I, a non-soccer fan, could understand: The Oscars drew 17.9 million viewers. The Game of Thrones finale drew 19.3 million. The Super Bowl drew 125.6 million. But all that’s nothing compared to the 2022 World Cup final drawing 1.5 BILLION!
The Georgia Municipal Association estimates the games will bring 500,000 visitors to ATL. Of course, these guests will dine out (and drink) for nearly every meal. Let’s assume each visitor eats just three restaurant meals while they’re in town. That’s 1,500,000 dining occasions. If your restaurant sees just one tenth of 1% of those visits, that’s an additional 1,500 people in your dining room. We’d better be ready!
That kind of attention changes the stakes. Atlanta won’t just be hosting matches. We’ll be making first impressions for visitors from all over the world, and restaurants will be a big part of that story.
Some restaurants will feel it directly. Others may only see a ripple. But if you’re within an hour of the city, assume new guests will find you.
This is a rare chance to show the world the depth, diversity, and hospitality of Atlanta’s restaurant community.
The world is coming. As my grade school soccer coach used to say, we should “LOOK ALIVE!” @rohospitality

What a thrill to be back on campus last week! Returning to @cornelluniversity reminds me where my perspective comes from. Not the classrooms or the case studies, but the expectation that details matter. That “the basics” matter. The Hotel School didn’t teach hype or trend chasing. I learned that academic intellectual curiosity can be applied to a restaurant, making hospitality both a craft and a system to study and improve.
Walking campus again, it’s obvious how much of what we do at @tableandmain and @osteriamattone traces back here. The idea that great restaurants don’t run on talent alone. They run on aligned teams making hundreds of small, correct decisions every day.
I’m grateful for the foundation and the people from this place who continue to shape how I think and operate. Always good to be back.
