From the appendage inspired and endlessly intriguing region of the Finger Lakes, we welcome our friend Rick Rainey of Forge Cellars back to Digress for another round of Forge Oyster Cult!
We have a couple of go-to Finger Lakes producers that we love, and Forge is one of em. Born of a partnership between Rick and Louis Barruol, a 14th generation winemaker based in the Rhone Valley, this project is old world meets new in the most extreme example. You may be familiar with this storied winery - Chateau de Saint Cosme, as well as the partnership Barruol Lynch with legendary importer Kermit Lynch. Rick came from a slightly different world, leaving his native Florida for Pennsylvania, and a subsequent career on the import/distribution side of things, namely working for the long respected Winebow. Through numerous trips to the old world, a friendship with Louis was forged, and eventually the notion of exploring a partnership in the Finger Lakes was discussed as a real option.
Louis was insistent upon exploring strictly cool climates, where nuance shines, acidity and structure are naturally built in the vineyards, and achieving ripeness detracts nothing from the delicate complexities that are found in a bottle of Forge. Where they venture into mad scientist territory is with the sheer number of single vineyard bottlings produced each year. Seriously…who releases 13 different single vineyard Rieslings? These, coupled with 3-6 single vineyard Chardonnays and reds, offer some real insight into their commitment to showcasing the subtleties of each unique site.
This is precisely what we love about em, and precisely why you want to be here to meet the man himself and receive the best masterclass in Riesling and oysters around. Our buddy Mike from the Curious Oyster will be slingin the bivalves, we can’t get enough of those things. This is going to fill up quickly, don’t sleep on tickets! See y’all there.

Its high acidity & freshness plays perfectly with our Farmer’s Plate & house-made Rillettes! You can choose between rabbit or beef Rillette… but you’ll probably want both. 😉

A good hot dog beats a box of chocolates, right?
When Rick took a trip to Vancouver B.C., he encountered the original Japadog cart located on Burrard Street and had a life changing hot dog experience. Right up there with the now closed Hot Doug’s of Chicago where he had his first foie gras and Sauternes duck sausage. Yeah, he loves hot dogs.
So bring your Valentine and join us for our rendition of the Terimayo Japadog made with Berkshire “Kuobuta” pork - hot & ready from 4pm-6pm Friday and 3pm-6pm Saturday.
Another spectacular Salon season is coming to a close! Every episode was action packed, but it’s time for the Season Finale - so let’s celebrate the same way we did last year: with live music, seafood, and lots & lots of bubbles. Come get your final Salon dose before we go into hibernation.

After 18 years of professional cooking in New York City, Chef Jake and his wife Caroline jumped at the opportunity to realize a long-time dream of owning a small inn. When they learned the North Branch Inn was available, they knew the time was right. Prior to making the move Upstate, Jake owned Michelin-recommended Le Fond in Greenpoint, Brooklyn which was named one of Conde Nast Traveler’s Best New Restaurants of 2014. Jake, a Cordon Bleu alum and veteran of the kitchens of La Roche Le Roi in Tours, FR, brings his French technique and training to an American concept at North Branch Inn.
It’s simple, honest cooking with fresh, locally sourced ingredients. This Sunday (December 14th), he’ll be taking us on culinary adventure in the dining room of his 1860’s boutique hotel, the North Branch Inn.
