Cooking healthy and delicious food during lockdown can be difficult, so
@nigelbarden and his sous chef's have shared a couple of easy recipes straight from the cupboard to help you out 🍲🥫🍽 Left: Chorizo & Butter Bean Tagine (serves two)
1 tbsp olive oil
1 onion, finely chopped (fresh or frozen)
2 garlic cloves, crushed (fresh, frozen or from a jar)
75g chorizo sausage, skin removed & cut into 1cm slices
100ml red wine
400g tin chopped tomatoes
1 red onion, with the petals (layers) peeled off individually
400g tin butter beans, drained
1 tsp dried mixed herbs
a few fresh rosemary or thyme sprigs (or from frozen)
sea salt & freshly ground black pepper
2 tbsp of finely grated Parmesan cheese
warm crusty bread, to serve
Heat the oil in a large, high-sided frying pan.
Add the chopped onion & garlic & cook for a few mins over medium heat. Add the chorizo sausage & cook for a further 2-3 mins.
Add the red wine & bring to the boil. Allow to bubble until the mixture is reduced by half. Add the tomatoes, red onion petals, butter beans 100ml water & the dried mixed herbs & rosemary or thyme sprigs. Simmer, uncovered for about 10 mins.
Season to taste with salt & pepper & spoon into warmed serving bowls. Sprinkle with the Parmesan & serve immediately with chunks of warm crusty bread to mop up the juices. ------------- Right: Every Day Dahl (serves four)
1 tsp garam masala
2 tsp turmeric
1 tsp chili powder
1 carrot grated
2 tsp ground cumin seeds
2 tsp ground mustard powder
3 garlic cloves, crushed (or from a jar, or frozen)
2 tsp chopped ginger, from a jar, or frozen, or 2cm piece of fresh ginger, peeled & chopped
1 onion, chopped (fresh, or frozen)
30g olive oil
400g water
400g can coconut milk
130g dried red lentils, sieved, rinsed and drained
400g tin of chopped tomatoes (or the same amount of fresh tomatoes)
80ml lime juice
1 tbsp fresh or frozen coriander, or 1 tsp of dried
Salt & pepper to taste
Dry fry the spice mix
Add the onion, garlic & crushed ginger. Cook until translucent
Add the red lentils, chopped tomatoes, coconut milk, carrot & water.
Simmer for 20-25 minutes. Add lime juice, coriander. S&P to taste.
