We’re really pleased to announce @markmccabe_chef as a Kelly’s Cause ambassador. Mark has long placed mental health at the centre of how he leads and supports his team. As a prominent figure in hospitality, he shares our mission to build a mentally healthy industry for everyone in it. As head chef of @henrocksimonrogan Mark curates a menu shaped by Simon Rogan’s global influences, with inspiration drawn from Hong Kong, Malta, and Thailand, alongside a deep respect for hyperlocal ingredients. Working closely with the team at Our Farm, @rogan_simon regenerative farm, Mark is involved in growing and preserving a selection of tropical and exotic plants, while also incorporating wild, foraged ingredients from the Cartmel Valley into his cooking. Having people like Mark alongside us matters. It’s how we continue building a hospitality industry that looks after its people, not just its guests.

Time for a cuppa then eh? What an incredible honour to be part of @greatbritishmenu 20th anniversary banquet. Such an amazing night! @amberlfrancis @delportjean and @littlechefsally cooked their absolute hearts out and I felt so fortunate to be there with them playing my small part. This week has been such an amazing experience. I always knew I had more to offer the competition after my first series and I wanted to prove to myself that I can cook at that level. Getting to the finals was everything I’d hope for - amazing chefs, delicious food, great judges and the chance to meet new people and try new things. Also the chance to meet and cook for some of my culinary heroes at the banquet was a huge honour - hopefully I’ll have more than a canapé to offer next time! I started cooking a lot later than most of my peers and sometimes it’s hard not to compare yourself to those around you, particularly in this industry. I’ve always felt like I have a lot of catching up to do and a big point to prove but I hope this week has gone some way to show that what I might lack in some areas, I make up for in sheer bloody mindedness! Thank you for all the love and support this week and a huge thank you to all the crew, producers, home ecs, camera and sound gang, director, runners, judges and other chefs. You’re all amazing. Onwards.

It’s been a couple of weeks since I cooked with @markmccabe_chef and the @henrocksimonrogan team. I was lucky enough to eat in the restaurant the night before and it was AMAZING!! 💫 It was such a great evening, and a real pleasure to work with you all. Another glorious dinner in The Lake District at @henrocksimonrogan which is in the most stunning hotel called @linthwaitehouse overlooking Lake Windermere. This luxury hotel in The Lakes is one I return to time and time again and once you visit you will see why. This was a collab between Head Chef @markmccabe_chef and fellow @greatbritishmenu contestant @chef_roberta_hall who got her fish dish to the banquet a few years ago. I got to meet them both too which was lovely after seeing their faces so many times on the TV! Each dish was so elegant on the plate with some utterly Devine sauces & purées, beautifully cooked fish and a mushroom parfait I wanted to bury my face in. Service was second to none like all of the @rogan_simon restaurants. I’m always blown away by how incredible the team is and how lovely and warm they are. It’s always a pleasure to be around them. I spent the evening with some new friends who made it even more special. Turns out dining with people you don’t know is actually a recipe for a really fun evening! Last night I had the pleasure of dining at @rogan_simon @henrocksimonrogan and the 10-course tasting menu was nothing short of exceptional. As I was driving, I opted for the apple and chilli no-alcohol margarita to start – refreshing, vibrant, herby and warming, the perfect start with a hint of what the would be on offer The journey begins with light, delicate dishes that gently awaken the palate, before building in flavour, intensity and complexity as the experience unfolds. Each course feels perfectly placed, growing punchier and more layered as the evening progresses, creating a sense of anticipation for what might arrive next. Picking a favourite dish – or even a top three – was impossible. Just when you think you’ve decided, the next course arrived and changed your mind. As a lover of celeriac though, the blackened celeriac pudding was outstanding; rich, comforting and packed with deep earthy flavour. The duck was another highlight - melting in the mouth yet holding its own beautifully against the boldness of the offal and plum. Dessert brought a wonderful sense of nostalgia. The fig leaf and pineapple weed dish took me back to childhood memories of making blackcurrant pasties with my Grandma, the woman who inspired my passion for food. The use of liquid nitrogen to create pellets of blackcurrant sorbet was genius – delivering bursts of intense flavour and texture that made the dish playful and memorable. Head Chef @markmccabe_chef and front of house manager @clairerachel_ along with all the staff treated us like royalty from the moment we arrived. The relaxed, unhurried service meant every mouthful could be fully appreciated without feeling rushed. If like me you inundate the staff with questions about processes, fear not, the level of detail the FoH team went into was incredible. Every question was answered as if I was talking to the chef himself. Foraged ingredients from the kitchen garden and @ourfarm shone throughout the menu, beautifully highlighting the passion for fresh, local and British. Seeing Mark at the end and having a tour of the kitchen topped what was an unforgettable birthday meal. #henrock #simonrogan #ourfarm #cumbria #savvybynh

It's officially two years since Mark McCabe (@markmccabe_chef ) join us as head chef at Henrock by Simon Rogan.⁠ ⁠ It's been great to see the direction the restaurant has taken under Mark's leadership. He has worked closely with executive chef @paulburgalieres to bring together @rogan_simon ’s global influences with the incredible produce from @ourfarm in the Cartmel Valley. ⁠ We were also proud to see Mark represent Scotland on @GreatBritishMenu , reaching the final banquet in 2025, and being a finalist in the National Chef of the Year competition.⁠ ⁠ A big thank you to Mark for everything he brings to the team and the restaurant. Reservations are now LIVE for a very exciting four-hands dinner between @chef_roberta_hall and our head chef @markmccabe_chef at Henrock on Sunday 12th April.⁠ ⁠ A two-time Great British Menu finalist, Roberta was voted Scottish Chef of the Year 2025. She currently runs three Edinburgh restaurants - @thelittlechartroom , @eleanore_leithwalk and Michelin Bib Gourmand @ardfern_edinburgh .⁠ ⁠ For one night only, the two Scots will cook a nine-course collaborative tasting menu using local and seasonal produce from the Lake District.
