Like many chefs, I started out washing dishes in a local pub kitchen and waiting tables. It didn’t take long to realise that I wanted to be a chef—the buzz, the teamwork, the energy—it was intoxicating. As I worked in different kitchens, I knew I wanted to learn from the best and, one day, lead a Michelin-starred restaurant. When we opened Moor Hall in March 2017, our goal was to create a world-class destination. The ambition to earn 3 MICHELIN Stars felt outrageous, but that dream has become a reality. I’m incredibly fortunate to have the support of my amazing partners, Andy & Tracey, my wife Jenn, and my family. And, of course, our unbelievably talented team—many of whom have been with us from day one. They are what makes Moor Hall what it is every single day. The Barn at Moor Hall is the sort of place you go to when a simple meal won’t do, when the day calls for something a little more considered. Mark Birchall, the chef behind Moor Hall, a three-Michelin-star restaurant, brings a quietly assured style that is refined without being overstated and thoughtful without ever feeling forced. The menu follows the rhythm of the seasons, shaped by what is available locally at any given moment, with much of the produce drawn from their gardens or nearby growers. The cooking feels precise yet effortless, beautifully balanced, elegant and memorable. What elevates the experience further is the wine pairing, done perfectly, thoughtful, well paced and genuinely enhancing each course. It’s not just a meal, but an experience, one that unfolds from the setting to the final course, leaving a lasting impression.
