In addition to subtle pineapple notes from the pineapple rum and dried garnish, Mark uses a local Macau tea liqueur named San Xun (@sanxunteawine ) and byproduct of the housemade tofu at the bar’s next door neighbour within the property @Lakeview.Palace to achieve the milk tea fragrance and texture 🫖 To avoid leaving it too sweet, lime juice is added in the end to keep the flavor balance!

Introducing Kaya! A word that summons any Southeast Asian flavor lovers in two syllables 🍞🥥 It was born out of our love and good times at @catbiteclub in Singapore last year in the form of a Kaya toast gimlet!
Inspired by Cat Bite Club’s rice and agave spirit obsessions (+ the shots and cocktails Mark consumed), he has decided to use a 50/50 split of Sake and Mezcal as the spirit base for this sour 🍶🌵 The Kaya toast flavor that we all love comes from 2 main ingredients, our housemade Gula Maleka made from cooking down palm sugar and pandan leaves, and our secret Kaya sour mix. Lime juice is then added to cut through the sweetness while keeping the signature flavor profile intact!
Garnished with a shortbread and 3 Kaya sauce dollops for additional toasty flavor, your next holiday is ready 🇸🇬

There’s no party without Negroni, of course 🥃 So Mark (@mark__macau ) decided to bring the party with Miami Vice Negroni in the “Stirred” section of UNITY!
This tiki twist on the Italian classic is inspired by our tropical friends @kikis.lounge from a not-so-tropical island of the Isle of Man 🏝️🇮🇲 Mark infuses a rum-based negroni with in-house freeze-dried strawberries, pineapple and coconut, so the tropical fruits don’t affect the ABV or texture of the drink itself! Not to mention that the fruits are all sourced within the @wynn.palace restaurant ecosystem, to get one step closer to a close-loop system around the property.
