Food and how it is made has always fascinated me. Through making my own food with local and seasonal ingredients I take ownership of what I eat and my health benefits from the food and the time I take to make it. In times where people are more and more losing connection to what they eat it feels good to spend time to carefully select ingredients and turn them into a wholesome and tasty meal. This steak sandwich is full of rich and nutritious well cared for seasonal produce. Almost all ingredients are from the @la_farms deli who are well known for their grass fed wagyu beef but their biodiverse farm has so much more to offer including my favourite stoneground wheat flour.
Ciabatta (2 long buns)
Ingredients
300g LA Farms stoneground wheat flour
260g water
90g sourdough starter (or 2-3 grams of active dry yeast)
6g salt
Mix all ingredients and let sit for 30min. For 3h fold the dough every 30-60min until it is stable and bubbly. Put in the fridge overnight. Take out of the fridge and put on a bed of semolina or flour, fold the sides in and cut into two pieces. Rest them on a kitchen linen dusted with rice flour for 1-2h. Meanwhile preheat the oven to max. temperature and prep the toppings. When the oven is preheated bake the ciabattas at max. temperature for 15min. It helps to bake them on a stone or steel and add steam, but it’ll also work without, just make sure to put the rack in the middle as a normal pan will get too hot and burn them if it sits on the bottom.
