Cooking this dish at @letoilerestaurant felt like stepping back into a chapter that shaped me. This fourth course— @straightforwardfarm lamb choucroute, a provincial dish of Alsace-Lorraine—was inspired by The Spirit of Alsace and by my time cooking at L’Etoile under Odessa, when I first realized how naturally Alsatian food belongs in Wisconsin. It was about nostalgia, craft, and honoring the kind of work I love most—especially sausage-making—while celebrating the place that made it all click. MSA member, Chef Evan Dannells shares how the ACA is what makes coverage possible for his team. Now his costs are set to rise by $18,000. Evan spoke earlier this week with Leaders Hesselbein and Neubauer about why protecting the ACA is critical for Main Street. If we’re serious about supporting small businesses, healthcare has to be affordable.

We’ve been proud to work with @vitruvianfarms since the day Cadre opened using just about everything they grow through the seasons, with their mushrooms a year-round staple in our kitchen. They continue to produce the highest quality, in every season, with every crop. 🍄‍🟫 We loved visiting the farm last week for a tour and seeing firsthand the work and heart behind everything they grow. Had the opportunity to speak about something that hits home for every small business owner: affordable healthcare matters. God I suck at goodbyes, so I’ll keep this brief. When we started Cadre nearly six years ago, nobody could have imagined we were going to have to deal with a global pandemic (almost immediately), reinvent ourselves about a dozen times, and essentially be on the brink of bankruptcy for years. Nobody signed up for that. Nobody should have stayed for that. Every single person here helped us navigate that time, but only one person trudged into this empty little hell with me every single day to help find the other side - Colton. Because of Colton, not only did we end up with a much clearer picture of the restaurant we needed to be, but we also truly became the Cadre that is our namesake. I can’t remember a day where he wasn’t the last person I said “see you in the morning” to while he was polishing the bar at the end of the night. He’s been the co-architect and staunchest advocate of our little restaurant/pirateship/social experiment for the entirety of its existence. So, I’m definitely more than a little heartbroken that he’s moving on, but I’m proud beyond words of watching him grow and find something that makes his passion for wine a full time job. His bar knowledge and mastery of warm, attentive hospitality will leave us with big shoes to fill but will carry him far in his next chapter. So, screw it. It’s not goodbye - it’s see you in the morning. Even if that morning is a bit further away.
