We asked What‽ Food Group’s David Donde a few questions about @flourmarketct , their new bakery located on the corner of Roodehek and Hope.
Q: Tell us about Flour Market, what it is and how it came about...
A: From its beginnings at Truth Coffee, What‽ Food Group has always been about helping people enjoy real food. Flour Market is the result of this purpose, and the eventual lack of capacity at Truth to meet our baking demands. We wanted to build a no compromise bakery using real food as ingredients.
Q: How did you end up on Roodehek Street?
A: I was exploring the potential of the neighbourhood and fell in love with the space at 105 Hope Street, which was in the process of being renovated.
Q: What’s your favourite thing about the area?
A: What I always fall in love with is an under-loved neighbourhood that is ripe for resurrection. Roodehek has all the right ingredients.
Q: If there’s one thing people should come to Flour Market for, what is it?
A: The Basque cheesecake-like flan! It’s so subtly sweet that it’s almost savoury.
Q: What can people look forward to from Flour Market in the year ahead?
A: More food to grab and eat, our pita bread is about to launch, and just a consistent back-to-basics approach to ancient techniques and ingredients.
Q: Anything else you’d like to add?
