This shop is a culmination of years of experimenting, playing, learning, honing, and eventually planning and building. It didn't come out of nowhere. At the end of the day it's my responsibility but as a space, it's an embodiment of ~many~ people's efforts, designs, input, and time. Appreciate everyone I was fortunate enough to tap into during our buildout and the folks that continue to provide services beyond the day to day of the shop.
Ultimately, it wouldn't be a shop w/o the shopkeepers, bakers, porters, sandwich makers, and of course our customers. Putting it lightly, this is both the most challenging and rewarding endeavor I've ever taken on and I am beyond grateful to everyone here that keeps the wheels turning - Proud Bagelguy keep on burning.
And to my personal Samwise Gamgee @silber.ware I can't thank you enough for everything you do to keep this biz and me upright <3

RAMEN THING having a moment ✨
This sandwich was born in December of 2019 when we were still doing pop ups as Dodo Bagels. I was trying to offer an interesting egg sandwich that didn't involve cooking them on the spot.
This one came together after a few rounds of experimentation.
Was pretty apparent right away that we had somethin special and our first menu item for when were ready to do the brick and mortar thing💡🧠⚡️
For the uninitiated...

We're a small kitchen and have been in the habit of flipping our hot station to boil eggs at 12:30/1 as needed for other favs like our Herby Egg Salad & Ramen Thing.
Trying somethin a little different with our timing so we can keep egg & cheese going til close 🤞 for good!
