When I signed onto bringing back Gage & Tollner seven years ago, the fact that Ms Edna Lewis’ time here as Executive Chef was THE thing that made the project even more exciting and meaningful! Our menu nods to the long history of our restaurant as a classic Oyster Chophouse but I also wanted to emphasize Ms Lewis’ time here in the late eighties/ early nineties as she leaned into her way of cooking and celebrating the seasons as a chef. I look toward her amazing cookbooks, especially Taste of Country Cooking for inspiration and guidance.
We celebrate her legacy on the regular on the menu and in our private dining room named in her honor. This year marks the 50th anniversary of Taste of Country Cooking. To mark the occasion, we are getting ready for a huge celebration in honor of this Grand Dame of southern ( read American) cooking to benefit the Edna Lewis Foundation! Join me, @mashamabailey@leahbcooks@chefadriennecheatham for a multi-course dinner, emceed by @audiophilegirl ( Of Finding Edna Lewis
Film)
Tickets are available for purchase at bembrooklyn.com/tocc50. Each ticket includes a copy of the new 50th-anniversary edition of The Taste of Country Cooking, courtesy of Knopf Cooks.
Those unable to attend who would like to make a gift to the Foundation can do so at theednalewisfoundation.org/donate.
See you in the Edna Lewis Room at her table @gage.and.tollner
Five years ago this month, Gage & Tollner officially reopened its doors. Somehow, time has flown faster than we ever imagined. What began as an ambitious vision came with its fair share of uncertainty. But rebuilding this storied restaurant from the ground up and restoring the legacy of Gage & Tollner has been nothing short of an incredible journey. Every step: menu testing, construction challenges, and countless small details, was approached with care and craftsmanship. Seeing it all come to life has been deeply rewarding. This milestone belongs to so many. To our investors, our dedicated staff, and every guest who has walked through our doors, thank you. Your belief and support made this possible. This experience has been a true testament to the idea that teamwork really does make the dream work. We laid our foundation with longevity in mind, hoping to honor the original spirit of G&T while building something that can thrive for generations to come. Of course, the journey wasn’t without its challenges. We were set to open in March 2020, only to delay for over a year due to the pandemic. In that time, our community showed up for us in extraordinary ways, ordering ribeye meal kits, purchasing gift certificates, and helping us provide meals and treats to frontline workers. That support meant everything. Today, it’s an honor to welcome that same community back into our space, whether it’s for a quiet martini at the bar or to celebrate life’s biggest moments: weddings, graduations, and engagements in our private dining rooms. Here’s to the past five years, and to many more ahead!!🥂🍾
Big news from the Sunken Harbor Club, our new food menu has officially launched, featuring the debut of our take on the classic pupu platter. A staple of mid-century dining, the pupu platter rose to popularity in the 1950s, often credited to Trader Vic, blending Hawaiian “pūpū” (appetizer) traditions with Cantonese-American flavors during the height of the Tiki era. Our platter brings together crispy chicken wings (spiced, cured, double-fried, and tossed in a citrus soy glaze) alongside pork spare ribs made from our original recipe with house-made duck sauce. You’ll also find coconut shrimp, battered and fried until golden, smoked tofu egg rolls filled with Korean vermicelli noodles and vegetables, vegetable Rangoon, and pan-fried rice cakes brushed with gochujang and finished with black and white sesame. Next time your in, give it a try, this fun festive spread really tops off the SHC experience.🔥
