Sharing Derek’s enthusiasm launching the next generation in our kitchens! @nicksonbroadway SHE WON! CONGRATULATIONS JENEYA!!!! It’s so difficult to pick a winner, all the kids worked so very hard on their dishes, and to me they are all winners. They had so much fun. They are all learning invaluably necessary skills that they are already enjoying & sharing with their families and that will provide them happiness, health, sustenance & understanding for the rest of their lives, and that is essential & beautiful. Amazing jobs to them, their parents, their teachers & the volunteers who help them actualize their creative dreams. They picked inspiration & recipes from films & movies they loved. Jeneya was incredible in the kitchen and with her presentation. A total natural. She used lots of fresh veggies & lean meat in her dish and it was vibrant, delicious & nutritious! It was a pleasure talking with her parents afterwards and seeing their glow when they spoke about how much she loves to cook at home. Like me, she’s the youngest of a big family and spent a lot of time in the kitchen with her mom, and it shows Jeneya. I’m so inspired. ❤️🙏

Amplifying Derek! @nicksonbroadway So proud of my friend & fellow @chefscollaborative chair Marc Oshima (@oshimagoodfood ) for testifying in front of the House Ag Committee. In advance of the important 2023 Farm Bill, Marc represented urban farming, controlled environment agriculture, and indoor vertical farming. Marc’s work & impact with @aerofarms is inspiring and speaks to food’s true power, importance & potential for good in the world.

Sharing this important #seafoodsulutions chef action from @indigenouschef : TODAY, I join 200 fellow culinary leaders to ask Congress, including my Representative @repvern to take action to address illegal, unregulated, and unreported fishing and its links to forced labor at sea. We are committed to the health of the environment and food systems, but IUU fishing impacts our ability to source seafood that is sustainable and caught by people working in humane and fair conditions. It’s always great to hear from our own #meatmatters expert, @adam_danforth . @sustainabledish In this episode, I chat with @adam_danforth , a butcher, educator, and @beardfoundation award-winning author. He is an active board member of the @goodmeatproject and @chefscollaborative and through this work, he leads experiential workshops worldwide on butchery and meat science for venues such as Stone Barns Center for Agriculture, the James Beard Foundation Chefs Boot Camp, Google, and the National Bison Association. Adam also consults and provides education to restaurants including Eleven Madison Park, Gramercy Tavern, Bazaar Meat, and Maude. We talk about Adam's road from corporate marketing burnout to his career in meat processing and humane butchery. We also discuss his latest initiative, @roguefoodunites , a nonprofit which meets the immediate and long-term food needs of fire victims in Southern Oregon with comfort food prepared by locally-owned restaurants. For nearly a decade we have worked with them to produce an essential ingredient in all our menus, canned tomatoes. Dirty Girl Produce grows amazing dry farmed tomatoes that they drive down to Happy Girl Kitchen Co. to have canned for a year’s worth of use at our restaurants. This is just one example of the many relationships restaurants have with the greater community of local growers and makers. The 86Fund stepped up this year and helped shine a light into all these spaces that needed a little extra help. Restaurants not only touch hundreds of customers every day but countless farmers, bakers, small-scale food producers, winemakers, fish folks, tea & coffee producers. It’s impossible to look at a future without these people and 86Fund is doing their part to ensure the network of food businesses can continue to thrive. #shopsmall

We always take a pic together to clarify our identities since we are constantly being confused by the public. If you don’t know this beautiful man already he’s about to be the more famous of the two of us.

Always feels special to get to this place and see where so much of our food comes from. So much love, hard work, sacrifice & attention goes into bringing food into our kitchen & onto your table. It's really important for me to stay tethered to that. To feel & understand the weight of that. The responsibility, the gratitude, the opportunity. An anchor in this storm that keeps me grounded, inspires, gives hope & purpose that our choices have impact, and even in our tiny little restaurant we can make a difference. To me, a strong food system is guided by educated decisions from both consumers and producers. For this to happen, we need to acquire an in depth understanding of the seemingly endless topics our global food systems encounter. My suggestion to all of you is simple: GO DOWN THE RABBIT HOLE! Thankfully, there are a ton of resources out there, and an entire world full of folks working hard to effect change. If you are a chef too, I urge you to check out @chefsmanifesto and join our global netork of chefs working with the @goodfoodforall_sdg2 advocacy hub to end hunger by 2030. I also invite you to go down the rabbit hole with me today via stories, as I share *some* insight on how to source sustainable seafood.
