Just a somewhat random 2025 photo dump More focus on myself this year, not so much necessarily coffee(although a lot of the photos are😂 I can’t seem to get away after all) but trying to put myself back outside of just competitions and seeing other things also in other perspectives. Another wrap to another BrC for this year. Thank you for all of those who saw and have told me this my most stable performance yet (at least with the least amount of stage fright), I’m glad that some of that little bravado I still had got through 😂 The topic of acidity was something I thought of last year because facing customers everyday, you get asked for recommends, or the most often one: ‘is the coffee sour?’ Or ‘which one is less sour’ So I wanted to think of something simple that could be handled by everyone, and with any bean and it’s a funny story because I accidentally landed on this recipe because I got called away to answer and my brew at that time was blooming past 2 minutes and so I just rounded it off with a single pour to save it. And it was worth it, because that cup was really yummy😂 So I tried over these months to bring it across again in this year’s BrC. But sometimes accidents do happen for weird unexplainable reasons (my 3rd Kalita got randomly stuck and thus resulted in that cup being underfill) and we just learn from the experience. Just wanted to write this to share some funny anecdotes that I don’t have time to share on stage and to write out the recipe although it isn’t really anything special, but it does actually work across most drippers, so I hope it can help anyone at any stage with expressing acidity, and maybe fall in love with that part of coffee. ‘1+1’ Brew Method (for 15g version) 0:00 50g water 1:00 200g water Total 250g water, aim for 1:45 - 2:30 total time. Pretty simple in that it only requires you to adjust grind size to find that sweet spot. And water temperature around 94-96C. I hope this recipe is at least a bit of fun and simple to play with for everyone 😌 I have plenty of figuring out to do but I’ll definitely come back stronger! 𝕒𝕣𝕥. 𝕨𝕒𝕧𝕖𝕤. 𝕡𝕖𝕠𝕡𝕝𝕖 Just some of the photos & random moments I took on an islands trip around Sai Kung featuring art installations done over the last 3 years (This is an annual event called the Sai Kung Arts Festival, quite unique in that it features multiple islands and the harmony it has with each island). Such incredible weather and each piece of art carried such warmth with each of their backstory connecting them back to certain bits of history or lore to each island. Thanks @muiszewa for inviting me on this tour, it was really lots of fun😌 #hkig

This year, I learnt the huge importance of schooling my expression and that the judge poker face is very very hard. Okay not only just that😂 (but it was so hard getting my jaw not to twitch from all the laughter I was holding back) My second year as a judge for HKCIGS and it has been such a ride! Rolling through all those rounds in preliminary and then not fully expecting to being also able to judge in the finals. Thank you for giving me this chance, it was admittedly very nerve-wrecking but I am ever so grateful for all the guidance @susie_deballon @sieuming @christian8947 @sophie_chan So much laughter and fun (also much seriousness!) that I’ve never thought I would experience without this ‘family’ of ours, inclusive of the other ‘children’ @xena0801 @stanfordchin @ivancpp.coffvengers )😂 Lots of reflections in these past few days and there was definitely a lot to feed myself for growth not only as a judge, but also as a competitor and person in general. Congratulations also to all competitors and finalists and to our champion 🏆! #hkcigs 📸️ @tay.wong_

A no-regrets impulse decision to get on a plane to Tokyo for the first time on a quick two-day ‘speedrun’ What started about what coffees to drink on dayoffs turned into this whirlwind journey through a new country for me. And what better than this beautiful end before the flight back? (: Not only a much-needed rest but also a refresher not only into myself, but also all around me. Not everything needs to be 100% perfect, just that we should be happy and what we want to do can be done, step by step. (More bits later!) #hkig #tokyo #shibuyasky

Just that obligatory (?) post to look back at 2023 since I didn’t post it yesterday but I guess fitting with my BC opening😂 “ᴛʜᴇʀᴇ ɪꜱ ᴀ ꜱᴀʏɪɴɢ, ᴛᴏ ᴍᴏᴠᴇ ꜰᴏʀᴡᴀʀᴅꜱ, ᴡᴇ ʜᴀᴠᴇ ᴛᴏ ʟᴏᴏᴋ ʙᴀᴄᴋ ᴛᴏ ᴏᴜʀ ᴘᴀꜱᴛ.” Too many things in 2023: many good, many not so good. But all are experiences to my growth. It’s not easy admitting my weaknesses or faults in myself but some of these have made me face myself in very raw moments, and I’m glad I broke through them and well, some maybe not so yet. The above is not everything but just some of the major stuff in the year: 1. My first Barista Championship: whatever got into my head to be convinced and take that dive headfirst when I’ve never stood behind an espresso machine, I hope I still have that in the future😂 the most insane 4-5months of training to put me on that stage, lots of frustration and crying and moments of insane happiness with the breakthroughs. This was really one of the biggest things for me in 2023 and thank you so much to all those who walked beside me throughout it(: no competition is a one-man job and I am always so glad to have my competition teammates. 2. My first Brewer’s Cup: planning my own routine and workflow for the very first time as a home brewer and making it into the top 24 was more than I could have asked for😂 3. First time attending a WCC show in Taipei and volunteering backstage: many new friends made and experiences learnt 4. The usual Aeropress thing🤣 yes I do tend to like to immerse myself in competitions. To me they’re like little goals and I love the experiences I get through them. 5. First time judging for Coffee in Good Spirits 6. My first origin trip: to the mother country of coffee, Ethiopia Many things have changed throughout last year and well, I don’t know what 2024 will have for me, but I will be ready to face it! 𝕓𝕖𝕚𝕟𝕘 𝕒 𝕠𝕟𝕖-𝕕𝕒𝕪 𝕓𝕒𝕣𝕚𝕤𝕥𝕒 ɢᴜᴇꜱᴛ ꜱʜɪꜰᴛɪɴɢ & ᴛʜᴏᴜɢʜᴛꜱ 終於可以靜靜地寫下八月尾第一次企bar的經驗! 首先,感謝 @duetcups 同埋 @_kwokck 俾我呢個機會第一次企係bar同埋做第一個guest shift XD 我成日會亂入bar玩,從來冇諗過會正式冲啡俾大家。 當然,都好多謝每位黎探我的朋友,無論係咖啡師或home brewer。好多我都好unexpected會黎支持我,所以我真係好開心! 個日選的豆的roasters對我係呢兩年浸係精品咖啡呢個世界不停比我驚喜的roasters (除左unir,呢個係HKCTC期間的新發現同埋比左我好大驚喜!) 所以都多謝 @hatchcrafted , @19grams.coffee , @harvest_coffeeroasters 同埋@unir_coffee for the very yummy coffees (: 我諗我最大的takeaway係咖啡師成日需要有的brew consistency 同埋stability。平日的我成日坐係電腦前工作,首先唔慣企全日(好佩服呢!):對脚真係差d死。係不停炒場要不停出手冲的情況底,發現自己要maintain我本身有四個好唔同的brew recipes (包括全部用C40的唔同grind size)都好難maintain。越夜其實認真自己taste到,我想要的quality不停drop as我自己體力越黎越低。本身guest shift前有諗過要唔要standardize所有recipe,不過之後決定唔想,因爲想盡量show每一隻豆的character (係我角度)。絕對係一個好好的經驗同埋好多takeaways! 雖然經歷過得一日,已經都令我更加佩服咖啡師(從來都清楚唔簡單,but knowing & experiencing is two different things)。 可以同大家開心講咖啡同埋見到大家好enjoy,我真係好大滿足感~ 相信呢個唔會係我唯一一次咁玩,所以都期待下次可以再為大家冲咖啡^^ Quite a much later 'latergram', but finally could write some thoughts about my first guest shift. Many thanks to Duet Cups for letting me stand behind the bar! I was astonished to see the amount of friends come to support the event, so thank you to all of you who made time to come over! The 4 coffees that I selected that day came from roasters that had never stopped amazing me during my coffee journey (with Unir being a new one!) namely Hatch, 19grams & Harvest Coffee Roasters. One of my biggest takeaways was the importance of brew consistency & stability. I had different recipes & grind sizes as I had went against standardized recipes to best present each bean and throughout the day, I could feel myself drop in brew quality as my energy dropped. It might have been a short time, but my respect for baristas was much increased.
