Produced by the Herrera Family at Las Margaritas, this rare Sudan Rume lot showcases the family’s continued pursuit of exceptional and experimental Colombian coffees. Known for cultivating unique varieties like Laurina, Sidra, Mokka, and Geisha, their coffees have become familiar companions on the world competition stage.
Sudan Rume remains one of the rarest varieties in specialty coffee due to its extremely low yields, but rewards with remarkable cup quality and resilience.
This lot undergoes an extensive multi-stage fermentation process—beginning with open-tank fermentation, followed by oxygen-free double fermentation, aerobic resting, washing, and carefully controlled mechanical drying. Every step is designed to preserve and elevate its floral intensity, layered sweetness, and spice complexity.

This Red Honey microlot comes from Mate Mateyos’ Keramo farm — a producer Swift Coffee Sourcing has partnered with since the 2016–2017 harvest. Over nearly a decade, that relationship has evolved from supporting a shared washing station to offering isolated single-farm microlots like this one.
The process is meticulous from start to finish: only perfectly ripe cherries are hand-sorted before being floated to separate the densest, highest-quality fruit. After another round of sorting, the cherries are gently pulped by hand while preserving as much mucilage as possible for the honey process. The coffee then undergoes a short fermentation before being slowly shade-dried on raised beds with constant turning and careful moisture control.
The result is a cup with clarity, balance, and layered sweetness — a reflection of both precision and patience at every stage.

@fincalanegrita is situated on the volcanic slopes of the Nevado del Tolima volcano in Tolima, Colombia. The farm occupies a unique V-shaped valley that creates a highly specific microclimate where the coffee trees only receive about 7 hours of direct sunlight each day. The rest of the time they are bathed in a cooling mist. This natural shade-grown environment slows the maturation of the coffee cherries, allowing for an exceptional accumulation of sugars and complex organic acids.
After harvesting only the ripe cherries, the fruit is placed into sealed stainless-steel tanks. Nitrogen is introduced twice during the anaerobic fermentation phase to prevent harsh or “boozy” sourness that can be found in traditional naturals. By flushing the tanks, Mauricio maintains a clean, stable environment that preserves the delicate aromatic compounds of the Wush Wush.

Harujion is our answer to the slow, heavy thaw of early spring. We wanted a profile that feels deeply intentional, capturing the fleeting nature of the season before the real warmth sets in. We let the Colombia La Golondrina Geisha take the lead as the main floral driver, laying down a dominant aromatic base. The washed Ethiopia Hirut Birhanu balances that intensity with a crisp, tea-like foundation and vibrant acidity. Finally, a touch of Panama Entre Pinos Geisha adds a deep sweet structure and a contrasting floral dimension. The result is a highly complex and delicate cup that forces you to slow down.

Named after Diego’s eldest daughter Luna, The process begins with harvesting overripe coffee cherries, which, due to their extended contact with the beans, absorb more fruity flavors from the pulp.
The cherries then undergo a short fermentation of about 12 hours before being depulped. After depulping, a liquid pulp extract is added, and the beans continue fermenting in this liquid environment for an additional 48 hours.
Finally, the coffee is dried using a dehumidifier to carefully remove moisture. This helps preserve its delicate flavor notes, prevents over-oxidation of the beans, and halts metabolic activity to avoid over-fermentation.

Hachi coffee project continues to showcase the cutting-edge scientific practices developed by Diego Bermudez being combined in junction with the quality crops of great farms. Hachi is a testament to the power of biotechnology and agroforestry, showcasing the power of collaboration in coffee production. We are very excited and honoured to be able to share the literal fruits of labour from this exciting project.
The cherries for this coffee were sourced from the El Peñon farm by producer Rubén Gomez. They cherries are pulped before being adding in a fermentation must (mossto). This must is made from the juices and pulp of geisha coffee that had undergone a carefully controlled fermentation for 48 hours. As a result the flavour precursors and other microbial metabolites from the geisha are introduced to the chiroso to create a unique harmonized profile.
