adriana wanted a comforting bowl to fight off against the recent cold & windy seattle weather, so we’re preparing khao piak khao gai, a quintessential lao dish eaten at any time of the day, preferably in the morning. a chicken rice porridge cooked in an aromatic broth with the traditional accouterments to freestyle your preferences: maggi seasoning sauce, fish sauce, @amone.sea chili oil, fresh lime juice, ground white pepper, crispy red shallots, som pak (rice fermented mustard greens), scallions, and cilantro
what should i cook next?
for nye 2024, adriana requested something surf & turf with something fun!. so we started with chicken croquetas (inspired from my time working under @chefjoseandres@rubengarciachef ) topped with @seattlecaviar siberian caviar. Then a @beastandcleaver bone in ribeye with @foothillsfarmer tatsoi dressed in a dill green goddess, toasted cashews, & salted egg yolk and sauced with a dried shrimp sauce mixed with @seattlecaviar ikura.

adriana requested 🇱🇦 food for our christmas dinner! ping gai (charbroiled chicken using @saengdouangdara@laospices 🇱🇦 bbq seasoning), tam mak houng (shredded papaya salad with all the funk), and khao niew (steamed sticky rice)
geared up with my favorite @tilitnyc apron, @madein carbon steel pan, @thechefspress press, @breville oven, papaya salad on @materialthingsstudio plate, and ingredients from @mekong_asianmarket

What an incredible night with @chefseng for our second AAPI Friends of the Flock dinner.
Thank you to everyone who joined us as we explored the bold, vibrant flavors of the Lao food movement through a menu that was playful and collaborative. It was a joy working alongside Chef Seng and her team to create something truly special together.

I'd like to take a moment to reintroduce a key member of our core team who has been with us since Thip Khao opened in 2014. My son and chef, Boby, has been instrumental in managing business logistics and serving as our company's Culinary and Operating Director since the age of 21. For many years, his contributions went unrecognized. The success and longevity of Thip Khao can be attributed not only to my efforts but also to the tireless dedication and sacrifices made by Boby. He continues to consult with the businesses and new Padaek in Arlington and Baan Mae DC.
DC, know this! His name is Boby with one B, and he is not under his mom's shadow; we are both under each other's shadow and each other shoulders.
