Why do some NA beers taste more like full strength beer—and others more like wort? A new peer-reviewed study from the University of Arkansas has the answer: 👉 It’s the yeast. Researchers at the University of Arkansas brewed a series of NA beers with different Non-Alc yeasts under identical conditions—same wort, fermentation temp, pitching rate, and finishing ABV (<0.7%). Then, a trained panel rated each sample across 24 sensory traits. The result? Berkeley Yeast’s NA Classic and NA Cabana scored high in tropical fruit, citrus, and floral. Other strains? Texas 5 brewery collab! 🤠 A couple of weeks ago, our brand ambassador Tim Sciascia flew down to Dallas to brew up a mega collab with some of our local brewery partners. Bringing the California spirit with him, Tim joined @rollertownbeer , @birdcreekbrewing , @whiterockbrewingcompany , @bankheadbrewpub.rowlett , and @southernrootsbrewingco to whip up a West Coast IPA called Western Playland. Fermented with our low diacetyl Fresh™️ Chico yeast for ultra focused hop expression, this IPA was split into two distinct versions. Both feature Columbus Cryo, Chinook, and Mosaic on the hot side for ripping, resinous flavor — then the batch was divided for individual dry hops. The “Classic” version of Western Playland leans into pine, citrus, and a touch of marijuana from Simcoe and a second helping of Mosaic. The “Modern” version was hit hard with Strata and Krush for strawberry, passionfruit, and fruit cocktail vibes, plus another dash of Mosaic for those dank berry aromas we all love. The brew day was extra special — a room full of brewers doing what they do best: sharing ideas, great beer, and a genuine love of the craft. Tim and Berkeley Yeast are incredibly grateful to everyone who took time out of their busy schedules to have some fun with us. We came away with a deeper appreciation for the Northern Texas brewing community — hardworking, quality-focused, and brewing world-class beer. WESTERN PLAYLAND WEST COAST IPA - GET IT TWO WAYS We started with a single 15 BBL batch…built with intention, loaded with killer ingredients. Then we split it in two. Two identical beers to begin with…then two separate 7 BBL fermenters. Two completely different hop expressions. This is where science meets style. 2 Versions: 6.5 ABV 78 IBUs Kettle Hops: Simcoe, Columbus, Chinook, Mosaic, Krush, Strata Classic West Coast Dry Hop: Columbus, Simcoe, Mosaic Modern West Coast Dry Hop: Mosaic, Krush, Strata Classic- “Western Playland” A classic version using Cryo Columbus hops (lays down a firm dank, earthy backbone), Simcoe hops (brings the bright pine & grapefruit, and smooth bitterness), and lastly our hand selected Mosaic (flashes of berry and tropical fruit).  The finish is crisp, dry and assertively hoppy in the West Coast way. Modern- Western Playland A modern hop version using Strata (leads with strawberry & passion fruit cannabis notes), Our hand selected Krush Cryo (layers in juicy citrus, fruit cocktail & soft tropical notes) and Mosaic (ties it all in with its signature berry-tropical swirl).  Still crisp, dry, still West Coast – just louder, juicier. One brew. Two directions.

From mash-in to whirlpool, it was all laughs, shared ideas, and that this is why we do this feeling. This one started with Tim Sciascia—who brought breweries together to brew his favorite style: a proper West Coast IPA. Last week we got some Fresh Chico into the hands of @westboundanddownbrewingco as they hosted a collaboration brew day for the @coloradobrewersguild ’s Collaboration Fest. This collab WC IPA is in conjunction with fellow GABF Brewery of the Year winners @cannonballcreekbrewingco and @rivernorthbrew and was sponsored by us, @rahrbsg and @yakimachief hops. As guests enter the festival they will be greeted with this beer. Pretty cool! Many thanks to the folks at Westbound for hosting us. Topper • New England IIPA • 8% ABV Citra / Simcoe / Centennial / Columbus Behold! Our tribute to a turning point in modern IPA. Inspired by the boundary-breaking spirit of early Heady Topper–inspired ales, this beer honors the moment when American IPA shed its obsession with polish and clarity and embraced aroma, texture, and luscious hop saturation. Brewed as part of the Bay Area Brewers Guild collaboration series for SF Beer Week 2026, our chapter represents IPA 2015 - a time when haze wasn’t a flaw, it was a feature. When breweries stopped filtering out character and started leaning into it. When juicy aromatics, soft bitterness, and pillowy mouthfeel rewrote the rules. For the Tri-Valley + East Bay chapter, Headyworks was selected to host this release - it’s fitting given our roots in hop-forward innovation. Built with expressive yeast from Berkeley Yeast and Thomas-Fawcett Pearl Malt from Country Malt, Topper captures the raw energy of the era. On the nose, stone fruit and bright grapefruit, backed by a hint of dark berry. The palate centers on bold citrus with light tropical notes, a touch of pine, and subtle dankness. It’s almost party time in San Francisco! Come by @Enterprisebrewingco after the opening SF Beer Week Fest on Sat. 2/21 at 5:00pm to hang with Tim from @Berkeley_Yeast (also founding brewer of Cellarmaker), Kim Sturdavant from @Admiralmaltings and the Enterprise crew. On tap will be a New Zealand IPA called “Hole in the Sky,” which is a collaboration between Berkeley, Admiral and Enterprise. Light in body, with impeccable NZ hop character from Nelson, Riwaka and Motueka. Come hungry because @Rosamundesf will be in the house slanging sausages. Plus we will have DJs spinning some awesome 80s goth, rock, metal and beyond. We can’t wait to see our friends, old and new!

Punchier than your best lot of Citra – for a much lower cost! Amplify the guava, passionfruit, and grapefruit notes of your IPA by adding Tropics Boost to your Tropics London fermentation. To make Tropics Boost, we take plants that are rich in thiol precursors. We extract and then purify just the thiol precursors that we want—no extra plant matter that can contribute off notes. Once added to wort, our Tropics yeast will release large quantities of the thiols 3MH and 3MA, the highly aromatic molecules that give passionfruit its signature aroma.
