Pavé — the third release in our Brewers’ Beer series — comes from the man himself, Joe “Bupps” Buppert. After traveling through Northern France and spending time at Brasserie Thiriez, @jbupps came back to Cellarmaker with a lasting appreciation for saison and the traditions behind it. Rustic, highly carbonated, and brewed with patience — saisons are beers that reward a slower approach. Inspired by the brutal cobblestone roads (pavé) of the Paris–Roubaix cycling race — famously nicknamed L’Enfer du Nord (“Hell of the North”) — this Franco-Belgian Saison is pale, dry, and layered with subtle pepper, orchard fruit, and a crackery wheat backbone. Brewed with Brewers Gold and Bramling Cross hops. A thoughtful nod to old-world farmhouse brewing and a style of beer less traveled. Now pouring at all locations.

Extremely tropical and oozing with overripe fruit character, I’m in Your Mind is a full-sensory hop trip bolstered by a unique lineup of over-the-top hops. Up front is Eclipse — a brand new Australian variety for us — throwing down big Galaxy vibes with radiant citrus and mango intensity. Then Nectaron and Nelson Sauvin, two of the punchiest New Zealand grown hops, crank up the juice with passionfruit, white grape, and dank herbal tones. A touch of Strata at the end seals the deal with that top-shelf red fruit character we all know and love.

We love making Pale Ales. West Coast Pale Ales, Hazy Pale Ales. All the Pale Ales. This past week at the World Beer Cup, we took home a Gold Medal in the Hazy Pale Ale category for Mt. Cook. Big props to our brew crew and the entire team. Beer is a never ending conversation around here. We’re constantly tinkering, trying out new ingredients and processes and doing what we can to bring the best to the Bay Area and beyond. Being recognized by industry judges is an incredible honor. We don’t always brew Triple IPAs—but when we do, they make a statement. This terpene-drenched beast is brewed with a hop bill that reflects our latest West Coast ideals: Mosaic, Simcoe, Strata, and Centennial layered again and again for maximum impact. Expect intense aromas of strawberry daiquiri, Grand Marnier, and lemon sorbet, grounded by notes of fresh ganja and redwood forest floor. Dank, bright, and dangerously drinkable—its 10% ABV is tucked neatly behind a wall of clean, crisp bitterness. It’s loud. It’s clear. It’s a Dank Statement.

When Amy and Zack from @shredbeer started talking to us about brewing a hoppy collaboration we knew we weren’t about to shy away from using some hard hitting hops. Macrodose goes big and bold, flexing some extremely dank hops. Up front we added some Columbus Cryo right at the start of fermentation to thoroughly infuse the piney, tangy marijuana notes. Then we highly dry hopped with Mosaic, Simcoe, and some of the most amazing New Zealand Nectaron we have ever smelled. So sit back, breathe easy and get ready for the Macrodose to kick in.

The last time we were in New Zealand was 2019. So much has changed in the beer industry and in general over 7 years. It was truly wonderful to reconnect with our partners, talk shop and select from the new crop. New Zealand hop varieties make up 40% of what we use in our hoppy beers throughout the year. Getting as close to the source as possible is always the move. Last week we had the distinct pleasure of selecting Nelson, Nectaron, Motueka, NZ Cascade, Peacharine and Riwaka @freestylehops , @nzhopsltd and @eggershops . New Zealand hop farmers rode a hell of a rollercoaster this year with weather events and a rainy harvest finale, but at the end of the day, the quality across all varieties is truly excellent. Punchy, fruity, oily, tropical: All the things we look for… absolutely singing! Look out for a Cellarmaker x @garageproject collab dropping in New Zealand very soon. Look out for the Cellarmaker iteration of that same beer coming out in California in late May. An absolute cherry on top to get some quality hangs with our buddy Sam from @otherhalfnyc . Had a blast talking all things NZ Hops with Brent @machopsnz over dinner. Many thanks to the hop farmers in NZ for their hospitality and dedication to the highest quality possible. Dry, bright, and crisp, Dr. Peter Dankman delivers a proton stream of West Coast hop character that’ll stop any ghost in its tracks. Nectaron leads with white peach, passionfruit, and a bright citrus edge. Mosaic and Mosaic Cryo add depth with blueberry, a touch of earth, and just enough resinous dank to keep things interesting. Dry malt backbone stays out of the way while a firm, clean bitterness ties it all together. Dank and dialed in. No slime, no marshmallows.

Some collabs just feel right. This one with @riipbeer for our Week of Dankness is a perfect example. The crew from RIIP Beer Co. down in Huntington Beach made the trip up to Berkeley and we made a day of it. Good conversation, great food, a hike up Mt. Tam, and a shared love of making seriously hoppy beer. The kind of day that reminds you why this industry is special. Let It RIIP is our way of bringing you into it. Mosaic, Simcoe, Krush, Cascade Deep Cut, Columbus Cryo, Mosaic Cryo, Simcoe Cryo, and Cascade Cryo showcase notes of fresh mango, stone fruit, sticky resin, and bright pine. The result is a complex yet cohesive hop expression that hits every note without feeling cluttered. A simple grist of 2-row and pilsner malt provides a clean, dry foundation that stays light and crisp, letting the hops do all the talking. Even greater than the sum of its parts, this beer thoroughly exemplifies both RIIP’s and Cellarmaker’s brewing philosophies. Big hop character, clean finish, effortlessly drinkable.

Hash Bandicoot is the newest chapter in a friendship with @shredbeer built on great beer, a West Coast IPA loaded with Mosaic, Krush, Nelson Sauvin, Citra Cryo, Amarillo Cryo, and Krush Cryo. This beer is packed with tropical fruit, white grape, resinous pine, tangy pomelo, and a clean crisp finish that wraps it all up tight. No notes of Wumpa fruit in this one, but plenty of Dank to go around.
