Day 3 — and none of us were ready to leave. A picnic at Gooseberry Knob and venue tour at neighboring @theswagnc , a candlelit farewell dinner on Cataloochee’s Switchback’s patio, and toasts that stretched long into the evening. After three days, multiple stunning venues, hours of laughter, and more amazing food and wine than we are willing to admit, we can’t wait to send our couples your way for more unforgettable events. Day 2 at Cataloochee Ranch, and we were fully in it — lasso lessons under open skies, cocktails with a mountain backdrop, a white barn dressed in wildflowers, and clog dancers who had the whole room on their feet. We're no strangers to iconic spaces, from Lincoln Center's David Koch Theater to Temple Emanu-El's grandeur on the Upper East Side. For our first event of the year — a NYC wedding, we took a deliberate approach, embracing simplicity and scale to let the architecture shine. By paring down the design elements, we created a look that was both elegant and intentional. This meant a simple yet striking Chuppah, an understated bouquet that complemented the bride's dress, and a reception decor that highlighted our restaurant-pro clients' love of food. This gilded space holds a special place in our hearts. We debuted here with a NYC Opera gala in the late 90’s where flowers took a backseat. During the event’s planning stages, Chairwoman Caolyne Roehm’s initial guidance sparked a revelation when she said, “Your flowers are stunning, but this event is not about flowers.” She opened our eyes to realize that the world was our canvas, and anything could be our paint. Fast forward to today, and we’re back at the David Koch Theater (which was called the New York State Theater at that time), crafting a wedding that celebrates food over flowers for the loveliest restaurant industry duo.
