This high protein mango chia seed pudding is creamy, refreshing, and easy to meal prep ahead for busy mornings when you still want something that supports your goals.
📌 Save this for your next breakfast rotation.
Ingredients:
✔️ 1 cup frozen mango
✔️ 1 1/2 cups unsweetened vanilla almond milk (or milk of your choice)
✔️ 1/4 cup sugar-free maple syrup or sweetener of choice
✔️ 1/2 cup chia seeds
✔️ 1 scoop vanilla protein powder
✔️ fresh mango, for topping
Instructions:
1. Add frozen mango, almond milk, and maple syrup to a blender. Blend until smooth.
2. Add chia seeds and protein powder. Blend again on high speed until the mixture starts to thicken.
3. Divide evenly into 3 jars or containers.
4. Refrigerate for at least 1 to 2 hours, or overnight.
5. Top with fresh mango before serving.
