Going down in history as Cardiff’s first Michelin-starred restaurant, @gorserestaurant stands out for its unwavering connection to Welsh heritage interpreted through a modern lens.
It’s a tasting menu affair, emerging as produce-driven cooking dictated by Welsh ingredients and local suppliers. It’s not traditional (you won’t find token rarebit or cawl here). Still, rather than leaning into complexity, @tomdwaters cooking is underscored by admirable restraint and careful judgment, allowing just a few key ingredients to shine on each plate.
Early on, we’re welcomed with warm seaweed broth served in small cups that look and feel as if they’re encrusted with barnacles, while mackerel arrives on a bone-white ribbed dish. It’s tactile, considered dining with warm, comfortable service and intimate interiors that add to the appeal.
This is a restaurant in tune with the Welsh landscape as it stands today. There really is nothing like it.

Don’t know where to begin with this one. Yesterday night @gorserestaurant was awarded its first Michelin star after only eight months since opening. I can’t put in to words how much this recognition means to me. It’s long been a dream of mine to open a restaurant in my home city and to be the first chef to win @michelinguide star in Cardiff is without doubt the highlight of my career.
I couldn’t have done this without some amazing mentorship from some incredible chefs over the years. I’ve been very lucky in that I’ve learned so much from every chef I’ve ever worked for. I look forward to passing the knowledge bestowed on me by you to the next generation.
Most of all, though, I have to thank my one in a million wife @ayshanic for supporting my crazy dreams over the years. Without her love and support I would’ve long ago fallen by the wayside and given up. I owe it all to her.
The most exciting part of all of this is that we’re only just scratching the surface of what we can achieve at Gorse. Our wonderful team of @otoole_o@catymacmaster and @indiajasmine__ are just getting started. We look forward to welcoming many new faces to Gorse over the coming weeks and months to show you how far we’ve come.
Gorse is a modern Welsh restaurant in the heart of Pontcanna, Cardiff. We work with a small collection of farmers, growers, fishermen and local artisans to put a little taste of Wales on a plate. We hope to welcome you soon.

Following the resounding success of his pop-up ventures across Cardiff, Chef Tom Waters is set to open his first permanent restaurant, Gorse on May 28th, 2024 in Pontcanna kings road.
Having earned his stripes in prestigious London kitchens, including stints at Heston Blumenthal’s The Fat Duck, The Square and Bonhams, Chef Tom Waters returned to his Welsh roots with his pop-up concept Gorse, eighteen months ago.
Gorse is all about putting a new spin on classic Welsh ingredients, and framing them in a new light.
A lunchtime menu at Gorse will offer four courses for £35pp, whilst in the evening guests can choose from a seven or ten course tasting menu priced at £75 and £100 respectively.
The restaurant will open on the 28th May and bookings are now open via their website.
